Recipe adapted from Warriors Casserole on Cooks.com.
Ingredients/Substitution Ideas
- Olive oil–or canola, vegetable
- Chicken sausage–links or ground. You can also use rotisserie chicken.
- Diced green chiles–I used mild
- Sour cream
- Garlic salt
- Cheddar–I like sharp
- Tortilla chips–or Fritos
- Tomato
- Green onions
Steps
Heat a large pan over medium high heat. Dice up the sausage, if using links. Add the oil and sausage into the pan and brown the sausage.

Stir in the green chiles and sour cream. Add a few shakes of garlic salt, to taste. Heat through.
Stir in the cheese, until melted. Turn heat to low.

Crunch up tortilla chips and sprinkle on top along with the tomatoes and green onions. Serve and enjoy!

Notes/Tips
- Serve with shredded lettuce and a side of black or pinto beans.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months. The tortilla chips don’t stay crisp so eat those the first night.
- We love the Don Julios lightly seasoned tortilla chips lately.
- Other recipes you can make with green onions are loaded baked potato soup and shrimp and grits.
