Warrior Casserole–a stovetop skillet casserole with chicken sausage, sour cream, green chiles, cheddar and crunchy tortilla chips. A super fast and easy weeknight dinner.

Warrior Casserole

When you’re in a hurry and need to put something together for dinner quickly this easy stovetop skillet casserole recipe is a win. There isn’t a lot of prep time or cook time and that means you’ll be eating in no time! Get creative if you’d like by adding in a can of drained black beans or switching up the tortilla chips and rolling the filling in actual tortillas. Enjoy!

Ingredients/Substitution Ideas

  • Olive oil–or canola, vegetable
  • Chicken sausage–links or ground. You can also use rotisserie chicken.
  • Diced green chiles–I used mild
  • Sour cream
  • Garlic salt
  • Cheddar–I like sharp
  • Tortilla chips–or Fritos
  • Tomato
  • Green onions

Steps

Heat a large pan over medium high heat. Dice up the sausage, if using links. Add the oil and sausage into the pan and brown the sausage. 

Stir in the green chiles and sour cream. Add a few shakes of garlic salt, to taste. Heat through.

Stir in the cheese, until melted. Turn heat to low.

Crunch up tortilla chips and sprinkle on top along with the tomatoes and green onions. Serve and enjoy!

Notes/Tips

  • Serve with shredded lettuce and a side of black or pinto beans.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months. The tortilla chips don’t stay crisp so eat those the first night.
  • We love the Don Julios lightly seasoned tortilla chips lately.

Description

  • 1 (4 oz) can diced green chiles (I used mild)
  • 1/2 cup sour cream

  • 1/2 cup shredded cheddar
  • Tortilla chips
  • 1 tomato, diced
  • 2 green onions, sliced
