Patriot Casserole–an easy Instant Pot of ground beef with rice, salsa, cheddar, sour cream and topped with crispy tots.

Patriot Casserole
Today’s recipe is a pantry friendly ground beef recipe that is simple but tasty! You can choose to leave off the tots if you’d like and just have a rice dish instead. We love this dish for lunch leftovers the next day too. This recipe has been adapted from Patriot Pie on Raymond’s Food.
Ingredients/Substitution Ideas
- Lean ground beef–or ground turkey
- Dry minced onion–or ½ cup diced onion
- Kosher salt and black pepper
- Beef broth–or water and Better than Bouillon
- Converted rice--or long grain white
- Salsa or picante sauce–I used mild picante sauce
- Sour cream
- Cheddar cheese–I like sharp
- Tater tots–or crispy crowns
Steps
Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion, pinch of salt and pepper. Brown for about 5 minutes.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Sprinkle in rice and then add the salsa into the pot over the rice. Don’t stir.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. (Meanwhile, cook the tater tots in your oven or air fryer according to package directions). When time is up on Instant Pot let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Stir in the sour cream.

Scoop onto plates and top with some tots and a bit of the cheese. Enjoy!

Notes/Tips
- Serve with roasted vegetables like broccoli or green beans or a green salad.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Make it gluten free by not using the tater tots on top.
- What is converted/parboiled rice? Don’t confuse converted rice (or sometimes it is called parboiled rice) with pre-cooked or minute rice. Parboiled rice has been processed in its husk by soaking, steaming, and drying. As a result, all the nutrients from the husk are absorbed into the grain before it’s removed. The starch content alters in the process, making cooked parboiled rice less sticky than regular white rice. The rice kernels aren’t clumpy and glued together instead they are more separated. I found a bag of parboiled rice at Walmart next to the normal long grain white rice. Sometimes I buy it at Winco in the bulk section. I have also found it in the orange box (Ben’s brand) next to other rices.
- Try using brown rice. Pressure cook for 22 minutes and a 10 minute natural pressure release.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
