Description

An easy Instant Pot of ground beef with rice, salsa, cheddar, sour cream and topped with crispy tots.


Ingredients

Scale
  • 1 lb lean ground beef
  • 2 Tbsp dry minced onion
  • Pinch of kosher salt and black pepper
  • 1 cup beef broth
  • 2/3 cup uncooked converted rice
  • 1 cup salsa or picante sauce
  • 1/4 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 3 cups tater tots

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion, pinch of salt and pepper. Brown for about 5 minutes. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Sprinkle in rice and then add the salsa into the pot over the rice. Don’t stir.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. (Meanwhile, cook the tater tots in your oven or air fryer according to package directions). When time is up on Instant Pot let pot sit for 10 minutes and then move valve to venting. Remove the lid. 
  5. Stir in the sour cream. 
  6. Scoop onto plates and top with some tots and a bit of the cheese. Enjoy!
