Victory Casserole
Victory Casserole is the ultimate easy dinner when you’re craving something hearty and flavorful. It’s got all the Tex-Mex vibes with seasoned beef, black beans, corn, and salsa, topped off with crispy, golden tater tots and melty cheese. You can easily customize it to your personal preferences—swap in your favorite beans, veggies, or spice level to make it your own. Perfect for busy weeknights or feeding a hungry crowd, this dish is a guaranteed win!

Ingredients/Substitution Ideas
- Lean ground beef–I used 93/7
- Kosher salt
- Black pepper
- Onion powder
- Garlic powder
- Cumin
- Chili powder
- Frozen sweet corn
- Black beans–or pinto, kidney
- Salsa–I used mild
- Sour cream–optional
- Tater tots–or crispy crowns
- Cheddar cheese–I used sharp. For a spicier version use pepper jack cheese.
Steps
Heat oven to 425° F.
Heat an oven safe pan over medium high heat (I used a 12 inch cast iron skillet*). When display says HOT add in the beef and break it up. Stir in the salt, pepper, onion powder, garlic powder, cumin and chili powder. Brown for 5 minutes.

Stir in the corn, beans, salsa and sour cream.

Spread the tater tots evenly over the top.

Bake for 30 minutes. Sprinkle the cheese over the top and bake for 5 more minutes. Serve and enjoy!

Notes/Tips
- Serve with shredded lettuce and diced tomatoes.
- Like it spicy? Top with a few drops of hot sauce or dice up a jalapeno and add it in when you brown the ground beef.
- Love crispy tots? Bake the tater tots on a separate baking sheet or in an air fryer until golden before layering them on top of the casserole.
- Want to add some veg? Toss in diced bell peppers or zucchini with the beef to sneak in more vegetables.
- This recipe is gluten free as long as your tots are gluten free.
- I used my 12 inch cast iron pan*. If you don’t have an oven-safe skillet, transfer the beef mixture to a greased baking dish before adding the tots.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months. It’s best the first day since the tots will get soggy in the refrigerator.
