Description

A bold, Tex-Mex-inspired, one-pan casserole with seasoned ground beef, black beans, corn, salsa, and crispy tater tots.


Ingredients

Scale
  • 1 pound lean ground beef
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 2 tsp chili powder
  • 2 cups frozen sweet corn
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 cup salsa
  • 1/2 cup sour cream, optional
  • 1 pound tater tots
  • 1 1/2 cups shredded cheddar cheese

Instructions

  1. Heat oven to 425° F.
  2. Heat an oven safe pan over medium high heat (I used a 12 inch cast iron skillet*). When display says HOT add in the beef and break it up. Stir in the salt, pepper, onion powder, garlic powder, cumin and chili powder. Brown for 5 minutes.
  3. Stir in the corn, beans, salsa and sour cream. Spread the tater tots evenly over the top. 
  4. Bake for 30 minutes. Sprinkle the cheese over the top and bake for 5 more minutes. 
  5. Serve and enjoy!
