Description
A bold, Tex-Mex-inspired, one-pan casserole with seasoned ground beef, black beans, corn, salsa, and crispy tater tots.

- 1 pound lean ground beef
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp cumin
- 2 tsp chili powder
- 2 cups frozen sweet corn
- 1 (15 oz) can black beans, rinsed and drained
- 1 cup salsa
- 1/2 cup sour cream, optional
- 1 pound tater tots
- 1 1/2 cups shredded cheddar cheese
Instructions
- Heat oven to 425° F.
- Heat an oven safe pan over medium high heat (I used a 12 inch cast iron skillet*). When display says HOT add in the beef and break it up. Stir in the salt, pepper, onion powder, garlic powder, cumin and chili powder. Brown for 5 minutes.
- Stir in the corn, beans, salsa and sour cream. Spread the tater tots evenly over the top.
- Bake for 30 minutes. Sprinkle the cheese over the top and bake for 5 more minutes.
