Think Twice Casserole–say no to all the work of twice baked potatoes and make these EASY and (just as) tasty potatoes instead. With bacon, cheese and sour cream you know they’ll be good.

Think Twice Casserole

You’re going to be shocked at how delicious these potatoes are! My son said, “This is truly incredible” as he was eating them. Red potatoes are steamed in your Instant Pot and then mashed and stirred together with butter, milk, sour cream, cheese and bacon. I like to finish off the dish by “baking” it with my air fryer lid* to get that baked casserole taste (although this step if optional). I love twice baked potatoes but I love these potatoes even more. And I love that this casserole is easier and takes less overall time and work.

Ingredients/Substitution Ideas

  • Red potatoes–or yellow potatoes (no peeling necessary). You can use Russet potatoes, but I would peel them first.
  • Butter
  • Sour cream–or plain yogurt
  • Milk–or evaporated milk
  • Seasoned salt–Lawry’s brand is good
  • Garlic powder–or granulated garlic
  • Pepper–I like course black pepper
  • Chives–I used freeze dried. You can also use green onions.
  • Thick bacon–or bacon crumbles
  • Cheddar cheese–I like sharp cheddar shredded off the block

Steps

Add 1 ½ cups of water into bottom of Instant Pot. Add potatoes into a steamer basket. Drop the basket into the Instant Pot.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 8 minutes. When time is up move valve to venting and remove the lid. 

Move steamer basket out of pot, set aside. Discard the water and dry out the pot. Add potatoes into Instant Pot.

Mash. Stir in the butter, sour cream, milk, seasoned salt, garlic powder, pepper, chives, half of the bacon and half of the cheese. Taste test and add kosher salt to taste. 

If you have an air fryer lid: Spread the mixture out evenly.

Place air fryer lid on top and bake at 300 degrees for 10 minutes. Add the cheese and bacon on top and bake for 2 more minutes. 

Serve and enjoy!

Notes/Tips

  • Serve as a side dish to Sanpete County chicken. You can also serve as a side dish to pork chops, ham, steak, etc.
  • I like shredded my cheese off the block. I like the taste better and it melts nicely.
  • This recipe is gluten-free.
  • I use my air fryer* to cook my bacon. It makes it a hands off, no mess process.
  • I used my Duo Crisp Instant Pot*. You can also make this in an 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

Ingredients

Scale
  • 3 pounds red potatoes, cubed
  • 1/2 cup butter (1 stick)
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 1/2 tsp seasoned salt
  • 1/2 tsp garlic powder
  • 1/2 tsp pepper
  • 2 Tbsp chopped chives (I used freeze dried)
  • 5 slices of thick bacon, cooked and crumbled, divided
  • 4 ounces (1 cup) shredded cheddar cheese, divided

Instructions

  1. Add 1 ½ cups of water into bottom of Instant Pot. Add potatoes into a steamer basket. Drop the basket into the Instant Pot.
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 8 minutes. When time is up move valve to venting and remove the lid. 
  3. Move steamer basket out of pot, set aside. Discard the water and dry out the pot. Add potatoes into Instant Pot. Mash. Stir in the butter, sour cream, milk, seasoned salt, garlic powder, pepper, chives, half of the bacon and half of the cheese. Taste test and add kosher salt to taste. 
  4. If you have an air fryer lid: Spread the mixture out evenly. Place air fryer lid on top and bake at 300 degrees for 10 minutes. Add the cheese and bacon on top and bake for 2 more minutes. If you don’t have an air fryer lid: Spread the mixture evenly into a 9×9 inch pan. Sprinkle the cheese and bacon on top and bake at 400 degrees for 20-25 minutes. 
  5. Serve and enjoy!

    Recipe sounds enticingly delicious BUT what adaptations should/could be made if using a Crock Pot or stovetop method?

      You could make on the stove like you would mashed potatoes. Boil potatoes until fork tender. Drain. Then stir in the other ingredients. Spread into a baking dish and sprinkle with cheese and bacon and bake in the oven for 20 minutes at 350
