Wrangler Casserole–Come n’ get it!! A meal for your hungry cowboy. Ground beef, beans, bacon, cheese, corn and rice made fast in your Instant Pot.
Wrangler Casserole
Wrangler casserole is an easy one pot meal that has some smokiness (from the bacon) and some sweetness (from the baked beans and corn) and some meatiness (from the ground beef). It’s an easy way to feed a crowd with minimal effort! Whether it’s a cozy family dinner, a potluck gathering, or a weekend get-together, the Wrangler Casserole is a go-to option that never fails to please. And if you happen to have leftovers they often taste even better the next day, as the flavors continue to meld, resulting in a delicious encore performance!
Ingredients/Substitution Ideas
- Bacon
- Onion–yellow, white
- Lean ground beef–I used 93/7, or ground turkey
- Kosher salt
- Black pepper
- Garlic powder
- Chicken or beef broth–or water and Better than Bouillon
- Converted rice–or long grain white rice, basmati or jasmine
- Baked beans
- Frozen sweet white corn
- Tomato sauce
- Cheddar cheese–or colby jack
Steps
Turn Instant Pot to saute setting. Cut the bacon into half inch pieces. When display says HOT add the bacon into the pot. Cook until crispy. Use a slotted spoon to move it to a paper towel lined plate.
Discard all but one tablespoon of the bacon grease. Add the onion into the pot with 1 Tbsp of bacon grease. Saute for 2 minutes.
Add in the beef and break it up. Brown for about 5 minutes. Stir in the salt, pepper and garlic powder.
Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off the pot.
Sprinkle in the rice. Dump beans and corn and tomato sauce on top. Don’t stir.
Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
Stir. Salt and pepper to taste.
Sprinkle the bacon and cheese on top and let the cheese melt. Serve and enjoy!
Notes/Tips
- Serve with Chili Cheese Fritos, a green salad and a cornbread muffin.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- If you’re not a fan of the sweetness of baked beans use chili beans instead. I like Bush’s chili beans.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

- What is converted/parboiled rice? Don’t confuse converted rice (or sometimes it is called parboiled rice) with pre-cooked or minute rice. Parboiled rice has been processed in its husk by soaking, steaming, and drying. As a result, all the nutrients from the husk are absorbed into the grain before it’s removed. The starch content alters in the process, making cooked parboiled rice less sticky than regular white rice. The rice kernels aren’t clumpy and glued together instead they are more separated. I found a bag of parboiled rice at Walmart next to the normal long grain white rice. Sometimes I buy it at Winco in the bulk section. I have also found it in the orange box (Ben’s brand) next to other rices.

- 1 pound lean ground beef (I used 93/7)
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1 1/2 cups chicken or beef broth
- 1 cup uncooked converted rice (or long grain white rice)
- 1 (28 ounce) can baked beans
- 1/2 cup frozen sweet white corn
- 1 (8 oz) can tomato sauce
- Salt and pepper
- 1 cup shredded cheddar cheese

This a really good recipe. The flavour is great and the rice is a perfect replacement for pasta.
I used salsa instead of tomato sauce and it turned out quite good.

How do I make this in a crock pot?

I haven’t tried this one in the crockpot. I’m not sure it would be the best choice of cooking method since you would have to fry up the bacon and the onions on the stove and also brown the ground beef. But if you don’t mind doing that you would add everything to the pot after doing the work on the stove and cook on high for 2-3 hours. Then finish off with the cheese and bacon.

i don;t like pressure cookers so i would do the long route…….i do alot of recipes that say instapot and i do them slow cooker and they turn out great…..
