Instant Pot Cowboy Potatoes
Cowboy potatoes have all the makings for a yee-haw cowboy dinner…barbecue sauce, beans and bacon! Each potato is topped with a delicious pork and bean sauce and then the sour cream, cheese and bacon bring it up to the next level.
Everyone can make their own potato to their liking which is why this recipe is so great for family dinner. You know there is always going to be that kid that won’t eat anything but beige foods and then there’s the more adventurous folks that will go for an “everything” baked potato.
The cool part of this recipe is that you make the meat sauce and the potatoes at the same time in the same pot!
Ingredients/Substitution Ideas
- Pork carnitas meat–or beef stew meat or ground beef (see notes/tips section)
- Pepper
- Kosher salt
- Smoked paprika
- Liquid smoke–find it by the BBQ sauce
- Chicken broth–or beef broth
- Russet potatoes–medium size
- Chili beans–or ranch style beans
- Barbecue sauce–I used Sweet Baby Rays
- Cornstarch
- Toppings–butter, salt and pepper, sour cream, shredded cheese, bacon crumbles, green onions or chives
Steps
Add meat into Instant Pot. Sprinkle it with the pepper, salt, paprika and liquid smoke. Pour in the broth.

Place a tall trivet* into the pot and lay the potatoes on top of the trivet.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 20 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Use tongs to place the potatoes on a plate. Remove the trivet. Stir the chili beans with the juices and barbecue sauce into the pot. Stir together cornstarch and 3 Tbsp of water together in a small bowl until smooth. Stir the cornstarch slurry into the pot. Turn Instant Pot to saute setting. Once mixture has thickened turn off the pot.


Place a potato on each plate. Open the potato and top it with the bbq meat mixture. Top potato with desired toppings. Eat and enjoy!

Notes/Tips
- Serve with a side of steamed or roasted broccoli.
- I used a tall trivet* to place my potatoes on top of. This works well to cook two items at the same time! If you don’t have a long legged trivet you can just place a normal trivet on top of the meat and sauce. The potatoes might get a little messy but it will still work!
- I buy something called “pork carnitas” meat at Winco. I believe it is slices of pork shoulder/blade. They usually don’t have a ton of fat on them and they work perfect in the Instant Pot. I just cut mine into half inch cubes and they got perfectly tender in the 20 minute pressure cooking time.
- If you’d rather you can use ground beef for this recipe. Brown the beef using the saute setting before pressure cooking.
- I find that Russet potatoes work best for this recipe but you can also use Yukon gold or red potatoes.
- This recipe can be gluten-free. Check the barbecue sauce and chili beans labels to make sure you buy a gluten-free brand.
- I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days. The meat sauce will also freeze well for up to 3 months.
