Teton Waters Casserole–a cheesy Instant Pot sausage and rice dish made in one pot with savory sausage, tender rice, pimientos and a splash of cream for the ultimate comfort meal.

Teton Waters Casserole

This was one of those easy weeknight dinners that disappeared fast. Greg had a tiny plate and he went back 3 times. I told him that 3 small servings equal 1 big serving. He is funny…”I’m not that hungry” and then he proceeds to go back 3 times. I guess it’s like me with the brownies…I’m just going to straighten out the row (50 straightening rows later). The sausage is the key. It adds so much flavor. And the tiny amount of cream just adds some richness. Worth it! (Recipe adapted from Tetons Water Ranch)

Ingredients/Substitution Ideas

  • Ground sausage–I used Jimmy Dean. Try italian sausage or spicy sausage for more flavor.
  • Onion–or 1 Tbsp dried
  • Celery
  • Chicken broth–or water and Better than Bouillon chicken base
  • Converted rice–or long grain white
  • Heavy cream–or half and half
  • Pimientos–find next to the pickles
  • Fresh cracked pepper
  • Colby monterey jack blend cheese–or cheddar, parmesan

Steps

Turn Instant Pot to sauté setting. When display says HOT add in the sausage and break it up. Add in the onion and celery. Brown for 5 minutes. Drain off excess grease. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Sprinkle in the rice. 

Cover Instant Pot and secure the lid and make sure valve is set to sealing. Set manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid. 

Stir in the cream, pimientos, cracked pepper to taste and cheese. 

Serve and enjoy!

Easy One-Pot Sausage & Rice Dinner

Notes/Tips

  • Serve with roasted broccoli or garlic green beans.
  • Add a dash of Cajun seasoning if you want a Southern spin.
  • This recipe is gluten free.
  • To make this with brown rice increase cooking time to 22 minutes with a 10 minute natural pressure release.
  • I used my 6 quart Instant Pot*. You can also make this in a 3, 4 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Ingredients

Scale
  • 16 oz ground sausage
  • 1 small onion, diced
  • 1 rib celery, sliced
  • 2 cups chicken broth
  • 1 1/3 cups converted rice
  • 2 Tbsp heavy cream
  • 2 Tbsp pimientos
  • Fresh cracked pepper
  • 1/2 cup shredded colby monterey jack blend cheese

Instructions

    how do you make it in a slow cooker only want slow cooker recipes I don’t have an instapot thank you very much God bless

      Karen, II am interested in making your Teton Waters Casserole with brown rice. I see that you do explain that in NOTES and TIPS but that section does not appear on my printout. Perhaps the link to that section is broken? Or am I doing something wrong? – Rita

        Oh sorry! It’s not in the printable recipe. I guess I should have the option to add the notes and tips in. I will try to do that in the future.
