Confetti Chicken Casserole–a fast and easy skillet dinner with chicken. The green peppers, yellow corn, red pimientos and bright spinach make it look like a little party in your pan!

Confetti Chicken Casserole
I loved how bright and colorful this skillet turned out. At only 269 calories per serving, it felt like a nutritious choice without sacrificing flavor (thank you Boursin cheese). The creamy, herby sauce clings to the chicken and veggies coating every bite with flavor. Plus, it came together so fast. This is one of those easy weeknight meals that leaves you satisfied but not weighed down. It was great as lunch leftovers the next day too 🙂
Ingredients/Substitution Ideas
- Olive oil–or canola oil, vegetable oil
- Onion–or shallot
- Green bell pepper–or another color
- Frozen sweet corn
- Spinach–frozen or fresh
- Salt and pepper
- Cooked, chopped chicken–such as rotisserie
- Jarred pimiento–you can often find these near jarred roasted red peppers, pickles, olives, or artichoke hearts.
- Boursin Garlic and Herb Cheese–find in the refrigerated cheese/dairy section, often near specialty or spreadable cheeses.
Steps
Heat a skillet over medium high heat. Add in the oil and swirl around. Add in the onions and peppers and sauté for about 5 minutes, or until onion is soft and translucent.

Stir in the corn, spinach, salt and pepper and heat through.

Stir in the chicken, pimientos and Boursin and heat through.

Serve and enjoy!

Notes/Tips
- Serve with french bread or a baked potato.
- I used my large non-stick skillet*.
- This recipe is gluten free.
- Rotisserie chicken makes this extra fast, but any cooked chicken works great (even grilled or leftover baked chicken).
- Want more heat? Toss in some red pepper flakes or diced jalapeños with the peppers.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.
- Use the other half of the package of Boursin to make these tortellini and meatballs.

- 1 small onion, thinly sliced
- 1 small green pepper, cored and diced
- 1 cup frozen sweet corn
- 1 cup chopped spinach
- Pinch of salt and pepper
- 2 heaping cups of cooked, chopped chicken (such as rotisserie)
- 2 Tbsp jarred pimiento
- 1/2 package Boursin Garlic and Herb Cheese (75 grams)
Instructions
