Pride of Iowa Casserole

Today’s recipe is an adaptation from a vintage casserole. The original author said, “Pride of Iowa Casserole is a classic vintage dish that embodies the comfort and flavor of Midwestern cooking. With savory pork sausage, creamy corn, breadcrumbs, and a touch of tangy ketchup, this casserole delivers a hearty, satisfying meal.” I’ve mixed it up a bit with tomato sauce instead of ketchup and a few other changes. For fun here is the original recipe card.

Ingredients/Substitution Ideas

  • Jimmy Dean sausage–or your favorite brand
  • Eggs
  • Frozen sweet corn–or canned corn
  • Tomato sauce
  • Diced green chiles–or green bell pepper
  • Cream cheese
  • Panko–or regular breadcrumbs or cooked rice
  • Sharp cheddar cheese–or pepper jack, monterey jack, colby, mozzarella, etc.

Steps

Heat oven to 375° F.

Heat an oven safe skillet over medium high heat. Add in the sausage and break it up. Brown for about 5 minutes. Drain off excess grease. 

Stir in the eggs and break them up. Cook the eggs like you would scrambled eggs. Turn the heat to low.

Stir in the corn, tomato sauce, green chiles and cream cheese. Warm through enough to melt the cream cheese and warm the corn through. Turn off the heat.

Stir in the panko.

Sprinkle the cheese on top.

Bake for 25 minutes. Serve and enjoy!

Notes/Tips

  • Serve with cucumber and onion salad, green salad or fresh fruit.
  • Brown the sausage well. If you let it get a little crispy on the edges it adds flavor.
  • Try adding in some chopped green onions.
  • Drain the corn well if using canned (excess liquid can make the dish watery).
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

A one-skillet bake made with sausage, eggs, corn, green chiles and a cheddar topping.


Ingredients

  • 1/2 pound Jimmy Dean sausage

  • 2 oz cream cheese

  • 1 cup shredded sharp cheddar cheese
