Vanessa’s Casserole

For today’s recipe I’m setting aside the crockpot and the Instant Pot and am using the stove and oven. Don’t click out! I promise this recipe is worth a little more hands on time than you’ll normally find on this site. I had one piece and Greg literally ate the rest! He LOVED it and we served it for dinner even though it’s a “breakfast” dish. Usually breakfast casseroles contain hashbrowns or potatoes. But this recipe uses biscuit pieces for the base and I was not sad about it! I think you’ll enjoy this one…give it a shot 🙂

Ingredients/Substitution Ideas

  • Jimmy Dean sausage–or another brand you like
  • Onion–yellow, white
  • Pillsbury biscuits–or crescents
  • Eggs
  • Milk
  • Salt and pepper
  • Cheddar cheese–I like sharp

Steps

Heat oven to 350° F. Spray a 9×9 inch baking dish with non-stick cooking spray. Use kitchen shears to cut each biscuit into four pieces. Place the biscuits evenly into bottom of baking dish. Bake for 8 minutes (they won’t be fully cooked).

Heat a pan over medium high heat. Add in the sausage and break it up. Add in the onion. Brown for about 5 minutes.

Sprinkle the sausage and onions over the biscuit pieces.

In a bowl whisk together the eggs, milk and salt and pepper to taste. Pour the mixture over the top of the biscuit pieces and sausage.

Bake for 15 minutes. Sprinkle the cheese on top and bake for 5 more minutes.

Slice, serve and enjoy!

Notes/Tips

  • Serve with fresh fruit like strawberries, oranges and bananas.
  • Double this recipe for a crowd. Double all ingredients and use a 9×13 inch pan.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

    how many biscuits is that? and can I use frozen biscuits?

      I think it was around 6 or 7 biscuits. You can use frozen.

    I’m in the UK. I don’t know what Pillsbury products are. What would the substitutes be please.

      The Pillsbury product named here is an uncooked biscuits package. You could substitute whatever the equivalent is for you or even make you own biscuit dough and use that.
