Description

A cheesy Instant Pot sausage and rice dish made in one pot with savory sausage, tender rice, pimientos and a splash of cream for the ultimate comfort meal.


Ingredients

Scale
  • 16 oz ground sausage
  • 1 small onion, diced
  • 1 rib celery, sliced
  • 2 cups chicken broth
  • 1 1/3 cups converted rice
  • 2 Tbsp heavy cream
  • 2 Tbsp pimientos
  • Fresh cracked pepper
  • 1/2 cup shredded colby monterey jack blend cheese

Instructions

  1. Turn Instant Pot to sauté setting. When display says HOT add in the sausage and break it up. Add in the onion and celery. Brown for 5 minutes. Drain off excess grease. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Sprinkle in the rice. 
  4. Cover Instant Pot and secure the lid and make sure valve is set to sealing. Set manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid. 
  5. Stir in the cream, pimientos, cracked pepper to taste and cheese. 
  6. Serve and enjoy!
