Description
A cheesy Instant Pot sausage and rice dish made in one pot with savory sausage, tender rice, pimientos and a splash of cream for the ultimate comfort meal.

- 16 oz ground sausage
- 1 small onion, diced
- 1 rib celery, sliced
- 2 cups chicken broth
- 1 1/3 cups converted rice
- 2 Tbsp heavy cream
- 2 Tbsp pimientos
- Fresh cracked pepper
- 1/2 cup shredded colby monterey jack blend cheese
Instructions
- Turn Instant Pot to sauté setting. When display says HOT add in the sausage and break it up. Add in the onion and celery. Brown for 5 minutes. Drain off excess grease.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Sprinkle in the rice.
- Cover Instant Pot and secure the lid and make sure valve is set to sealing. Set manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
- Stir in the cream, pimientos, cracked pepper to taste and cheese.
