Slow Cooker Smothered Pork Chops
Most of the time I could take or leave pork chops. To me they are kind of a neutral food. I don’t love them and I don’t hate them. BUT that has changed with this recipe for slow cooker smothered pork chops. These pork chops were perfectly tender and the sauce was so good I could drink it. And not to mention the fact that there is plenty of bacon to enjoy along with the pork chops. YUM YUM and more YUM. Â We served our pork chops with baked potato and a green salad. You can easily make your baked potatoes in the slow cooker or you could even serve with my favorite garlic mashed potatoes.

What slow cooker did you use?
For this recipe, I used my 3 quart Casserole Crock. I love the casserole crock because it’s the size of a 9×13 pan but in the form of a slow cooker. The insert is oven safe which means you can easily finish off a slow cooker recipe in the oven. This comes in handy for a peach cobbler (to brown the topping) or to melt cheese on a casserole. It can also be handy to cook something in the oven and then keep it warm in the slow cooker.

Description
Slow Cooker Smothered Pork Chops with Bacon–the best slow cooker pork chops recipe ever! Tender pork smothered with savory sauce and bacon crumbles all made in your slow cooker.
Ingredients
- 8 slices crispy bacon, crumbled and divided
- 1 medium yellow onion, diced
- 1 Tbsp water
- 1/2 tsp brown sugar
- 2 garlic cloves, minced
- 1/2 tsp dried thyme
- 1/4 cup flour
- 1/2 cup chicken broth
- 2 Tbsp soy sauce
- 1 bay leaf
- 4 bone-in pork chops
- 1 1/2 tsp cider vinegar
- Fresh parsley for garnish, if desired
Instructions
- Place half of the bacon in bottom of slow cooker, save the other half for later.
- Microwave the onion, water, brown sugar, garlic and thyme for about 3-4 minutes (stirring every minute) until onions are softened.
- Stir the flour, broth and soy sauce into the onion mixture. Pour into slow cooker and add in the bay leaf.
- Nestle the pork chops into the sauce and lightly salt and pepper them.
- Cover and cook on LOW for 3-5 hours. Transfer pork chops to serving platter and tent loosely with foil. Let rest for 10 minutes.
- Discard bay leaf and then stir vinegar into sauce in slow cooker. Spoon sauce over pork chops. Garnish with parsley and top with extra bacon and serve.

I’m sure you could make it in the pressure cooker. I would cook 1-2 minutes with natural release.
I’m trying to make it in my instant pot and it gave me the food burn error. I had the bacon on the bottom. You’ll definitely have to modify the recipe more than just the time on the instant pot.

I need your help. I need to make about a dozen boneless pork ribs and another dozen pork chops in a slow cooker. From your recipes, the ribs have to cook twice as long as the chops. So, would it work if I cooked the ribs for 3 hrs., then add the chops for another 5 hrs ? I just need to come up with a sauce that would last this long . Thanks for any help.

really loved the gravy..since i added more chicken broth i also added more soy sauce and a little more flour. had it all over noodles. definitely a keeper (although i overcooked the chops a little bit)
Yes, it is only 1/2 a cup. It won't be swimming in sauce. Just place the pork chops on top of what you have. Probably about 1 1/2 lbs of chops. Good luck!
question…the sauce didn't seem like it was very much. it wasn't enough to "nestle" the pork chops in. i'm making this right now and i just added more chicken broth so we'll see how it comes out. is 1/2 cup the amount you used? and how many lbs of pork chops? thanks.
We had this for dinner tonight and I agree with you, this was the best crock pot pork chop recipe I've ever tried (and I've tried several!) The sauce was so flavorful and delicious. Mine was "close" to falling off the bone, but not so much that I had to fish the bones out, it was perfect. This will be my new pork chop crock pot recipe. Thanks!
