Slow Cooker Sausage Lentil Rice Soup
A 365 Days email subscriber, Sharon, sent me a version of this recipe. It was originally a stove top recipe. I read through the recipe and knew immediately that I would like it. Sausage flavors soups so nicely plus it had lentils in it (a highly underrated ingredient). The original recipe feeds a crowd and in addition to lentil and rice it also has tortellini! So it’s hearty. My version does not have the tortellini.
We all really loved this soup and the leftovers too. I always think soup is better the next day for lunch 🙂 Don’t just dismiss this soup recipe because of the lentils and you don’t think you like them or that your kids will like them. Seriously. Give it a shot!

A few notes about the ingredients I used…
Sausage–I used plain old pork breakfast sausage. I also think Italian sausage would be amazing. Or you could use turkey sausage as the original recipe called for.
Beef Broth–I used 8 cups of water with 8 teaspoons of Better Than Bouillon Beef Base. It’s my favorite. I find it very convenient to always have a jar of it in my fridge. I buy the big jars from Costco.
Lentils–lentils can be found by the dried beans at your grocery store. They are cheap and super healthy. I also like to buy lentils in the bulk section at Winco for a dollar a pound.
Rice–I used a long grain white rice for this soup so it would cook at the same rate as the lentils. I haven’t tried other types of rice with this soup yet.
Fire roasted tomatoes–I love buying cans of fire roasted tomatoes. They add a lot of flavor to my recipes. You can find them next to the normal canned tomatoes.

Slow Cooker Sausage Lentil Rice Soup

Description
A flavorful hearty soup with chunks of sausage, lentils, rice, fire roasted tomatoes and seasonings. Give it a shot for dinner this week!
Ingredients
- 1 pound ground sausage (you can use pork or turkey sausage)
- 1 cup diced onions
- 2 garlic cloves, minced
- 8 cups beef broth
- 1 cup diced or grated carrots
- 1/2 cup diced celery
- 1/2 tsp dried oregano
- 1 tsp dried basil
- 1 cup uncooked lentils
- 1/2 cup uncooked long grain white rice
- 1 (14 oz) can fire roasted diced tomatoes
- 1 (8 oz) can tomato sauce
Instructions
- Heat a pan over medium high heat. Add in the sausage and onions and brown the sausage for about 5 minutes. Drain off any excess grease using a colander. Add the sausage into the slow cooker. Stir in the garlic, broth, carrots, celery, oregano, basil, lentils, rice, diced tomatoes and tomato sauce.
- Cover the slow cooker and cook on low for 4-6 hours, or until lentils and rice are tender.
- Stir the soup and salt and pepper to taste. Ladle into bowls and serve.
