Slow Cooker French Dip Tacos–tender, moist shredded roast beef rolled up in a soft flour tortilla and topped with melty mozzarella cheese. Dip it in au jus sauce for best results!
Slow Cooker French Dip Tacos
Can I tell you a secret? I’m kind of a hamburger bun snob. If the bun isn’t homemade or a high quality roll I don’t really want it. Just don’t buy a one dollar bag of buns and expect me to eat them. Not going to happen. I’d rather eat calories that taste good like these 40-minute homemade hamburger buns or save the calories for dessert. So when I made a crockpot roast intended for French Dip sandwiches and then I didn’t have good bread to serve it on I decided to roll up the meat in a tortilla. It was a good choice. So these slow cooker French dip sandwiches turned into slow cooker French dip tacos and I’m not looking back. Serve them for Sunday dinner or Taco Tuesday–they belong in both settings.
Slow Cooker Beef Recipes
You know what works amazingly well in the slow cooker? A basic chuck roast. If you cook it low and slow and long it will eventually fall apart and become fork tender. Here are some of my favorite beef roast slow cooker recipes.

What Kind of Slow Cooker Did You Use?
For Slow Cooker French Dip Tacos I used my handy dandy 6 quart Kitchenaid slow cooker. It’s currently my favorite slow cooker for many reasons but the main reason is that is cooks at the right temperature. Too many slow cookers these days cook too hot and this one doesn’t.

Fruit salad? Green salad?
