Slow Cooker Chicken Pot Roast–a delicious twist on classic pot roast, this easy crockpot recipe has chicken thighs, carrots and a savory gravy.

Slow Cooker Chicken Pot Roast

Slow Cooker Chicken Pot Roast

This dinner takes the flavors from pot roast and uses chicken instead. Chicken thighs are a more affordable protein compared to a pricey chuck roast, but they still give you that tender meaty experience. This is truly a dump-and-go crockpot recipe that takes just a few minutes to throw together, making it perfect for busy days. My favorite way to serve it is over a pile of creamy mashed potatoes, but it’s also delicious over egg noodle or biscuits.

Ingredients/Substitution Ideas

  • Boneless skinless chicken thighs–frozen is okay. You can use boneless skinless chicken breasts but they don’t turn out as tender.
  • Carrots–or baby carrots
  • Celery
  • Onion–or shallot
  • Water
  • Au Jus mix–or brown gravy mix
  • Garlic powder–or minced garlic
  • Black pepper
  • Cornstarch

Notes/Tips

  • Serve over mashed potatoes with green beans on the side.
  • I used my 6 quart Ninja slow cooker. Slow cookers can vary quite a bit from model to model. Some cook hotter than others so you may need to adjust cooking times.
  • If you’d like more vegetables, add sliced mushrooms or frozen peas during the last 30 minutes of cooking.
  • This is dairy free. It can be gluten free if you use a gluten free au jus mix.
  • Store leftovers in an airtight container* in the refrigerator for up to 3-4 days. This recipe freezes well for up to 3 months. Cool completely before transferring to freezer-safe containers.

Description

A delicious twist on classic pot roast, this easy crockpot recipe has chicken thighs, carrots and a savory gravy.


Ingredients

Scale
  • 24 oz boneless skinless chicken thighs
  • 2 carrots, peeled and cut into 1 inch chunks
  • 1 rib of celery, sliced
  • 1/2 cup diced onion
  • 1 cup water
  • 1 (1 oz) packet of Au Jus mix
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 2 Tbsp cornstarch

Instructions

  1. Add chicken, carrots, celery and onion into slow cooker. Pour in the water. Sprinkle in the Au Jus mix, garlic powder and black pepper. 
  2. Cover slow cooker and cook on low for 4-6 hours or on high for 2-3 hours. 
  3. In a small bowl stir together cornstarch with 2 Tbsp water until smooth. Stir the mixture into the slow cooker to thicken the gravy. 
  4. Shred up or break up the chicken and stir it back into the slow cooker.
  5. Serve and enjoy!
