Description
A delicious twist on classic pot roast, this easy crockpot recipe has chicken thighs, carrots and a savory gravy.

- 24 oz boneless skinless chicken thighs
- 2 carrots, peeled and cut into 1 inch chunks
- 1 rib of celery, sliced
- 1/2 cup diced onion
- 1 cup water
- 1 (1 oz) packet of Au Jus mix
- 1/2 tsp garlic powder
- 1/2 tsp black pepper
- 2 Tbsp cornstarch
Instructions
- Add chicken, carrots, celery and onion into slow cooker. Pour in the water. Sprinkle in the Au Jus mix, garlic powder and black pepper.
- Cover slow cooker and cook on low for 4-6 hours or on high for 2-3 hours.
- In a small bowl stir together cornstarch with 2 Tbsp water until smooth. Stir the mixture into the slow cooker to thicken the gravy.
- Shred up or break up the chicken and stir it back into the slow cooker.
