Crockpot Chicken Francese–a flavorful slow cooker dinner made with lightly breaded chicken simmered in a rich buttery lemon sauce.

Crockpot Chicken Francese

This yummy lemon chicken is a fun dinner that you can make in your slow cooker. My chicken got ultra tender and was tasty paired with some mashed potatoes and green beans. The leftovers were quickly consumed by Skyler. You can easily double the recipe so you have lunch leftovers the next day! (Recipe adapted from The Top Meal).

Ingredients/Substitution Ideas

  • Chicken breasts–fresh, so you can slice in half lengthwise
  • Flour
  • Paprika
  • Garlic powder
  • Kosher salt–or sea salt
  • Black pepper–or white pepper
  • Eggs–or 1/2 cup buttermilk
  • Oil–oil oil, canola, vegetable, avocado, etc..
  • Chicken broth–or water and Better than Bouillon chicken base
  • White wine vinegar–or red wine vinegar
  • Butter
  • Lemon

Steps

Slice chicken breasts in half lengthwise.

In a shallow bowl or a pie tin whisk together the flour, paprika, garlic powder, salt and pepper. 

In another bowl whisk together the eggs.

Heat a pan over medium high heat. (I did this step in my slow cooker because it has a stovetop setting).

Dip each slice of chicken into the eggs and then bread in the flour.

Add oil into pan and swirl around. Sear the chicken on each side for 1-2 minutes and then move to the slow cooker.

Pour the broth and vinegar into slow cooker. Cut the butter up into several pieces and place it throughout the slow cooker. Do the same thing with the lemon slices. 

Cover slow cooker and cook on low for 2 hours (or until chicken is 165° F, each slow cooker cooks differently).

Serve chicken with a squeeze of lemon on top and enjoy!

Notes/Tips

  • Serve with rice or mashed potatoes and sauteed spinach on the side.
  • I used a 6 quart Ninja slow cooker. I like this slow cooker because it allows me to do the searing step right inside the slow cooker.
  • If your slow cooker runs hot, check the chicken around 1.5 hours to avoid overcooking
  • Store leftovers in an airtight container* in the refrigerator for up to 3-4 days.
