Road Rage Casserole

This is a solid and simple dinner that comes together quickly with the help of your Crockpot or Instant Pot. It’s a stew-like casserole that is basic but not boring or flavorless. This has easy-to-find ingredients in fact you might have everything you need already at home in your kitchen right now. Try out Road Rage Casserole for dinner this week!

This recipe has been adapted from Road Rage Ragu recipe that I found on Pinterest.

Ingredients/Substitution Ideas

  • Lean ground beef–or lean ground turkey
  • Onion–yellow or white
  • Celery
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Smoked paprika
  • Dried parsley
  • Beef broth–or water and Better than Bouillon beef base
  • Potatoes–Russets, red or yukon gold
  • Carrots
  • Crushed tomatoes–or petite diced tomatoes
  • Sour cream–optional

Steps

Heat a pan over medium high heat. Add in the ground beef and break it up. Add in the onion and celery. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper, garlic powder, paprika and parsley. Transfer to the slow cooker. (I used a slow cooker that has a stovetop function so I did this step in my slow cooker).

Stir in the broth, potatoes, carrots and crushed tomatoes. 

Cover and cook on low for 3-5 hours, or until potatoes are tender. 

Salt and pepper to taste. Serve with a dollop of sour cream, if desired.

Instant Pot/Crockpot Road Rage Casserole

Notes/Tips

  • Serve with green beans and a crusty bread with butter.
  • Try adding in a diced green pepper or 8 ounces of sliced mushrooms with the onion and celery.
  • This recipe is gluten-free and can be dairy-free if you don’t use sour cream.
  • Try adding a sprinkling of cheddar cheese on top.
  • I used a 6 quart ninja slow cooker. It has the feature where you can brown your meat in the crock before slow cooking. This makes clean up a breeze. You can also make this in a 3, 6 or 8 quart Instant Pot*.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

Ground beef and potatoes with carrots, celery, onions and tomatoes. An easy slow cooker or Instant Pot recipe. 


Ingredients

Scale
  • 1 pound lean ground beef
  • 1 cup diced onion
  • 1 rib of celery, diced
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1/8 tsp smoked paprika
  • 1 tsp dried parsley
  • 1 cup beef broth
  • 2 medium potatoes, cut into half inch cubes
  • 2 carrots, peeled and sliced
  • 1 (15 oz) can crushed tomatoes
  • Sour cream, optional

Instructions

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the ground beef and break it up. Add in the onion and celery. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper, garlic powder, paprika and parsley. Transfer to the slow cooker.
  2. Stir in the broth, potatoes, carrots and crushed tomatoes. 
  3. Cover and cook on low for 3-5 hours, or until potatoes are tender. 
  4. Salt and pepper to taste. Serve with a dollop of sour cream, if desired.

Instant Pot Instructions:

  1. Turn Instant Pot to saute setting. When display says HOT add in the ground beef and break it up. Add in the onion and celery. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper, garlic powder, paprika and parsley. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Add in the potatoes, carrots and crushed tomatoes. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid. 
  5. Salt and pepper to taste. Serve with a dollop of sour cream, if desired.

    Karen, my friend-for-life in the kitchen, you nailed it on this one!! Was so EZ and tasted amazing. I followed your recipe to the “T”, had it on the table quickly & hubby was Happy Camper. Left-overs were even better. Of course, I used the IP, my chowhound can’t wait long enough for me to do the crockpot.

    I haven’t tried your recipe yet, but I was wondering if you could use the tiny Golden potatoes? Also in order to make sure that the carrots and celery cook to soft and I do not turn the potatoes into mush. Should I be cooking my carrots and celery a little bit prior to adding the potatoes?
    Thank you can’t wait to try this.

      I think that would work great! I wouldn’t cook the carrots and celery beforehand. Keep the 4 minute pressure cooking time

    I do not use onions in ANYTHING! They make Me sick 🤢. I also do NOT add celery! I don’t like cooked celery, but I love raw celery! VERY GOOD!

    I want to try this recipe but hate to use another pan to brown the meat. This extra step has kept me from cooking a lot of crock pot recipes. So–I ordered the crockpot you use. It’s arriving on Saturday and I look forward to trying this dish. I know it will be delicious–I love all your recipes.
    Using the instant pot has been a revelation . I use your recipes 90% of the time. Almost all have been five stars!!
