South Dakota Casserole–an easy Instant Pot recipe with ground beef, potatoes, corn, bacon and lots of flavor!

South Dakota Casserole

South Dakota Casserole

The words from my 15-year-old when he ate this were, “This slaps.” In teenager speak that means “to be excellent or amazing.” I do have to agree that this dinner slaps. My husband and son both had their eyes rolling back into their head with delight and audible “mmmm”‘s were heard.

I grabbed this recipe from a family cookbook and I’m not sure why it is called South Dakota casserole…maybe the people that submitted the casserole were from there? Anyhow, I transformed the oven recipe into an Instant Pot recipe so that instead of cooking for 90 minutes in the oven it cooks in just 3 minutes of pressure cooking.

I think you’ll love this comforting casserole for dinner tonight! Enjoy 🙂

Ingredients/Substitution Ideas

  • Lean ground beef–I used 93/7. You can also try ground turkey.
  • Minced dried onion–or 1 cup diced onion
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Smoked paprika
  • Beef broth–or water and Better than Bouillon
  • Russet potatoes–or red potatoes
  • Worcestershire sauce
  • Cream cheese
  • Frozen sweet corn
  • Bacon crumbles–you can also fry up bacon and crumble it. I like cooking bacon in my air fryer!

Steps

Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion, salt, pepper, garlic powder and smoked paprika. Brown for about 5 minutes. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Evenly add potatoes on top of the beef.

Drizzle the Worcestershire sauce over the potatoes. Sprinkle the potatoes with a pinch of kosher salt. Place cream cheese and corn on top of potatoes. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 3 minutes and then move valve to venting. Remove the lid.

Stir in the bacon. Salt and pepper to taste. 

Serve topped with a bit of shredded cheese, if desired.

Notes/Tips

  • Serve with some roasted vegetables or a green salad.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • Other recipes you can make with frozen sweet corn are Julie’s Casserole and California Casserole.
  • This recipe can be gluten free if you use gluten free Worcestershire sauce.
  • Try adding in some sliced mushrooms or green peppers with the ground beef.
  • You can use a can of cream of mushroom or chicken soup in the place of the cream cheese.

Description

An easy Instant Pot recipe with ground beef, potatoes, corn, bacon and lots of flavor!


Ingredients

Scale
  • 1 pound lean ground beef
  • 2 Tbsp minced dried onion
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1/8 tsp smoked paprika
  • 1 cup beef broth
  • 1 1/2 pounds Russet potatoes, peeled and cut into 1/2 inch cubes
  • 1 Tbsp Worcestershire sauce
  • 4 ounces cream cheese
  • 1 cup frozen sweet corn
  • 1/2 cup bacon crumbles

      Hi Tina! Here’s how I would make it in the slow cooker:
      Slow Cooker Instructions

      1. In a skillet over medium-high heat, brown the ground beef with the dried minced onion, salt, pepper, garlic powder, and smoked paprika. Drain excess grease. Transfer to the slow cooker.
      2. Stir in the beef broth, Worcestershire sauce, potatoes, salt, cream cheese and corn
      3. Sprinkle with a pinch of extra salt.
      4. Cover and cook on LOW for 5–6 hours or HIGH for 2½–3 hours, until the potatoes are fork-tender.
      5. Stir everything together to melt the cream cheese into the mixture.
      6. Stir in the bacon crumbles.
      7. Taste and adjust salt and pepper if needed.
      8. top with shredded cheese before serving.

    I used ground turkey and cream of chicken soup instead. This tastes just like your sausage, green beans, and potatoes recipe (which me and my bf love). And this was just as good!

    Made this tonight for dinner. It was delicious! My husband was concerned about the potatoes not being cooked enough with a cooking time of 3 minutes. I assured him that they would. When I served dinner he said “oh, they are cooked!” He really enjoyed this dish!
