Time Machine Casserole–an old fashioned meat and potatoes casserole that’s been updated for cooking in your Instant Pot.

Instant Pot Meat and Potatoes

Time Machine Casserole

This old-fashioned potato beef casserole has been brought back to life for today by the help of the Instant Pot. The original recipe requires a long cooking time for the raw potatoes but my recipe pressure cooks the potatoes with just a one minute pressure cook time. You’re going to love the homemade, creamy, cheesy sauce that comes together very quickly. No condensed soups are used in this recipe! My boys loved this dinner and scraped the pot clean. Enjoy!

Ingredients/Substitution Ideas

  • Red potatoes–or Russet potatoes that have been peeled
  • Lean ground beef–I used 93/7
  • Dry minced onion–or ½ cup diced yellow onion
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Flour
  • Milk
  • Sharp cheddar cheese–or colby
  • Green onion–or chives

Steps

Pour 1 ½ cups water into bottom of Instant Pot. Place potatoes into a steamer basket and drop the basket into the Instant Pot.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up, let pot sit for 5 minutes and then move valve to venting. Remove the lid. Remove steamer basket and set aside. Discard water in the pot. 

Turn Instant Pot to saute setting. When display says HOT add in the ground beef and break it up. Add in the onion. Brown for 5 minutes, drain off excess grease. Stir in the salt, pepper, garlic powder and flour. 

Slowly stir in the milk and let it thicken. Once it has thickened turn off the pot.

Stir in the cheese and let it melt.

Fold in the green onions and potatoes. Salt and pepper to taste. Serve and enjoy!

Notes/Tips

  • Serve with roasted vegetables, green salad or raw vegetables and dip.
  • I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
  • I used my Avokado silicone steamer basket*.
  • Make it extra meaty by use a pound of ground beef instead of a half pound.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

An old fashioned meat and potatoes casserole that’s been updated for cooking in your Instant Pot. 


Ingredients

  • 1 1/2 pounds red potatoes, sliced into quarter inch rounds
  • 1/2 pound lean ground beef
  • 1 Tbsp dry minced onion
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1/2 tsp garlic powder
  • 2 Tbsp flour
  • 1 1/4 cups milk
  • 1 cup shredded sharp cheddar cheese
  • 1 green onion, sliced

Instructions

    This was fantastic! I made an aluminum foil sling for the potatoes (russets, peeled) and had to finished cooking them in the microwave because they weren’t cooked. The flavor was incredible- a great recipe!

      I worry that if you put the potatoes into the bottom of the pot in the water without the steamer basket they will get way too overdone. If you have a trivet or something to prop the potatoes up out of the water that would be helpful.

    Great recipe! Nice homemade white sauce ( yay for no cream of …soup) and the spices were spot on! So fast, great for a last minute meal. I accidentally used a lb of hamburger but no complains here. My picky husband even liked it. In the rotation for sure. Thanks for another great recipe, Karen!

    If you don’t have an Instant Pot, could this be done with a slow cooker?

      I would try it and see how it turns out and would fry the meat and boil the tators then add everything to crockpot
