Description
Ground beef and potatoes with carrots, celery, onions and tomatoes. An easy slow cooker or Instant Pot recipe.

- 1 pound lean ground beef
- 1 cup diced onion
- 1 rib of celery, diced
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1/8 tsp smoked paprika
- 1 tsp dried parsley
- 1 cup beef broth
- 2 medium potatoes, cut into half inch cubes
- 2 carrots, peeled and sliced
- 1 (15 oz) can crushed tomatoes
- Sour cream, optional
Instructions
Slow Cooker Instructions:
- Heat a pan over medium high heat. Add in the ground beef and break it up. Add in the onion and celery. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper, garlic powder, paprika and parsley. Transfer to the slow cooker.
- Stir in the broth, potatoes, carrots and crushed tomatoes.
- Cover and cook on low for 3-5 hours, or until potatoes are tender.
- Salt and pepper to taste. Serve with a dollop of sour cream, if desired.
Instant Pot Instructions:
- Turn Instant Pot to saute setting. When display says HOT add in the ground beef and break it up. Add in the onion and celery. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper, garlic powder, paprika and parsley.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Add in the potatoes, carrots and crushed tomatoes.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
- Salt and pepper to taste. Serve with a dollop of sour cream, if desired.
