Richie’s Casserole
Today’s recipe is an easy and delicious taco take on tater tot casserole. You’ll love that the recipe uses easy to find ingredients and is made all in one skillet for minimal dish washing.
Everyone loves tater tots and the recipe name comes from BYU basketball player, Richie Saunders. His great-grandfather, F. Nephi Grigg, co-founded Ore-Ida and invented Tater Tots in 1953. Ore-Ida just signed Richie to a NIL deal. After the first two BYU games in the tourney, Ore-Ida offered free tots for 30 minutes after each BYU victory. This collaboration gained significant attention when Saunders led BYU to an 80-71 win over VCU and 91-89 over Wisconsin. YAY!!! Go Cougs!
Ingredients/Substitution Ideas
- Lean ground beef–I used 93/7. You can also use ground turkey, ground pork or ground chicken.
- Kosher salt
- Black pepper
- Chili powder
- Cumin
- Paprika
- Garlic powder
- Onion powder
- Dried oregano
- Corn–canned or frozen
- Kidney beans–or pinto, black
- Tomato sauce
- Diced green chiles–I used mild
- Ore-Ida crispy mini tater tots
- Sharp cheddar cheese–or mexican blend
Steps
Heat oven to 425° F. Heat a cast iron skillet (or an oven safe skillet) over medium high heat. Add in the ground beef and break it up. Add in the salt, pepper, chili powder, cumin, paprika, garlic powder, onion powder and oregano. Brown for about 5 minutes.

Stir in the corn, kidney beans, tomato sauce and green chiles.

Heat through for 2 minutes. Turn off the heat.

Sprinkle the tater tots evenly on top. Bake for 25 minutes. Sprinkle the cheese on top and bake for 5 more minutes to melt the cheese.


Serve and enjoy!


Notes/Tips
- Serve with shredded lettuce, diced tomatoes and sour cream.
- What if I don’t have an oven-safe skillet? You can brown up the meat in a regular pan and then transfer the mixture to a 9×13 inch baking dish.
- Do I have to use the mini tater tots or can I just use regular tots? You can use regular tots! They might not get as crispy but it’ll still taste great.
- Want a creamy texture? Try stirring in a can of cream of mushroom soup in with the meat mixture.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months. This is best the first day because the tots are crispy.
