Wheelhouse Casserole

This is a delightful breakfast dish (we had it as breakfast for dinner). It’s fast and easy with only a handful of ingredients. Greg had a huge piece and so did I. We loved it with a bit of salsa on top. You only need one pan for cooking and baking, minimizing cleanup. Perfect for busy mornings or casual gatherings.

Ingredients/Substitution Ideas

  • Breakfast sausage–I like using Jimmy Dean Sausage
  • Tater tots
  • Cheddar cheese
  • Eggs
  • Milk
  • Salt and pepper

Steps

Heat oven to 350° F. Heat a large oven safe pan over medium high heat. Add in the sausage and break it up. Brown for about 5 minutes. Drain off excess grease. 

Add in the tater tots and the cheese. 

In a bowl beat together the eggs, milk and a pinch of salt and pepper. Pour the eggs evenly over the tater tots and sausage. 

Bake for 20 minutes. Bump up the heat to broil and broil for 2 minutes. 

Slice, serve and enjoy!

Notes/Tips

  • Serve with a few drops of hot sauce or salsa.
  • I used my large Farberware pan*. It is oven safe up to 350° F.
  • You can easily customize it. Swap breakfast sausage for bacon, ham, or even a plant-based sausage. Add veggies like peppers, onions, or spinach for extra nutrition.
  • This recipe can be gluten free if you use gluten free tater tots.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

  • 6 eggs
  • 2 Tbsp milk
  • Salt and pepper

    If I use a baking dish instead of pan what size do I use?

    Few ingredients!👍🏻 Easy!👍🏻 Delicious!👍🏻😋
    We enjoyed this delicious casserole as “BFD”(Breakfast For Dinner”…which we always enjoy!)
    Steamed spinach and salsa went nicely with it.

    With so few ingredients it was easy enough for my non-cooking hubby to make, as I am recovering after a nasty 2+ week go with covid 🤧🤒😷

    We didn’t have breakfast sausage on hand but did have mild Italian, so that’s what he cooked up.

    He was very proud to make a nice BFD for us…I hope it encourages him to take up cooking 😉😊
