Old Yeller Casserole
Like its namesake, Old Yeller Casserole gives a sense of steadfastness and reliability. Its ingredients are humble yet hearty. Beans are a reliable staple and because they can be used in so many different ways they are man’s best friend in the kitchen. Seasoned ground beef wins when it’s in a tangy, smoky and sweet sauce. This recipe will become a loyal friend when you’re short on time and energy. Skyler and I both loved this dish and were shocked at how flavorful it was…I think the trick with laying the bacon on top added so much to the dish. Try it!
Ingredients/Substitution Ideas
- Lean ground beef–I used 93/7
- Onion–yellow, white
- Kosher salt
- Pepper
- Dijon mustard
- Brown sugar
- Petite diced tomatoes–or crushed
- Kidney beans–or pinto, black
- Bacon–adds lots of flavor
Steps
Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion. Brown 5 minutes. Drain off excess grease. Turn off Instant Pot.
Stir in the salt, pepper, Dijon, brown sugar, tomatoes and beans.
Place the strips of bacon on top.
Cover Instant Pot. Set the Instant Pot to the SLOW COOK function on “normal” setting for 3 hours.
When time is up, remove the bacon and discard.
Stir and serve topped with Fritos, cheese and sour cream.
Notes/Tips
- Serve with a green salad, a corn salad, dinner rolls, cornbread, rice or baked potatoes.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- You can also make this with ground turkey.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

- 1 pound lean ground beef
- 1 medium onion, diced
- 1 tsp kosher salt
- 1 tsp pepper
- 1 Tbsp Dijon mustard
- 1/4 cup brown sugar
- 1 (14.5 oz) can petite diced tomatoes
- 1 (15 oz) can kidney beans, rinsed and drained
- 3 pieces of raw bacon
- For serving: Barbecue Fritos, shredded cheddar and sour cream
Instructions
Instant Pot Instructions (using the slow cooker setting):

- Heat a pan over medium high heat. Add in the beef and break it up. Add in the onion. Brown 5 minutes. Drain off excess grease. Transfer to slow cooker.
- Stir in the salt, pepper, Dijon, brown sugar, tomatoes and beans. Place the strips of bacon on top.
- Cover and cook on low for 3 hours.
- When time is up, remove the bacon and discard.
- Stir and serve topped with Fritos, cheese and sour cream.

Is it the bacon being raw that makes this a 3 hour cook time? If bacon isn’t used, is there a reduction in cooking time? If not, why? I’d just use bacon bits.
3 HOURS…in an IP – SAME directions for crock pot, NO Difference? Why bother!! This recipe sounded GREAT to me, UNTIL I saw a 3 HOUR cook time ! I use the Instant Pot to REDUCE cooking time significantly. I always use 1/2 recipe, as it’s just my husband and I eating, so I use the pot in pot method, as 1 1/2 cups of water are needed per the directions in the IP instructions booklet. Even though I brown the beef & onions, etc. in a fry pan on the stove, at least I can make the recipe in the morning, then reheat it for dinner (or even the next day) – I prefer it. VERY DISSAPOINTING 🙁

The bacon added flavor to the dish while slow cooking. It wasn’t crispy and all the flavor was gone after the cooking time was up so I tossed it. haha!
