Description

A Tex-Mex-inspired casserole with seasoned ground beef, beans, corn, and green chiles, topped with crispy tater tots and melted cheddar cheese.


Ingredients

  • 1 pound lean ground beef
  • 3/4 tsp kosher salt
  • 1 tsp black pepper
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 tsp dried oregano
  • 1 (15 oz) can corn, drained
  • 1 (15 oz) can kidney beans, drained
  • 1 (8 oz) can tomato sauce
  • 1 (4 oz) can diced green chiles
  • 1 pound Ore-Ida crispy mini tater tots
  • 1 cup shredded sharp cheddar cheese

Instructions

  1. Heat oven to 425° F. 
  2. Heat a cast iron skillet (or an oven safe skillet) over medium high heat. Add in the ground beef and break it up. Add in the salt, pepper, chili powder, cumin, paprika, garlic powder, onion powder and oregano. Brown for about 5 minutes. 
  3. Stir in the corn, kidney beans, tomato sauce and green chiles. Heat through for 2 minutes. Turn off the heat.
  4. Sprinkle the tater tots evenly on top. Bake for 25 minutes. Sprinkle the cheese on top and bake for 5 more minutes to melt the cheese. 
  5. Serve and enjoy!
