Ranch Beef Noodles–an easy Instant Pot recipe with seasoned ground beef, tender penne, sliced mushrooms and a creamy sour cream sauce.

Ranch Beef Noodles
This one-pot Instant Pot ranch beef pasta is genuinely a low effort recipe with the yummiest results! Greg loved this one so much. You brown the beef right in the pot, toss in some ranch seasoning for an easy flavor boost then add in the pasta and mushrooms and let the IP do all the work. A little sour cream, milk, and a splash of vinegar at the end makes it perfectly creamy and tangy. Serve it with a green salad and vinaigrette dressing or roasted green beans and garlic bread. (This recipe is adapted from Creamy Ranch Beef and Noodles on Hidden Valley).
Ingredients/Substitution Ideas
- Lean Ground Beef–or ground turkey
- Hidden Valley Dry Ranch Dressing Mix–I buy the big container from Costco
- Beef Broth
- Penne–or another short cut pasta
- Canned Mushrooms–or fresh mushrooms
- Onion Powder
- Garlic Powder
- Kosher Salt
- Pepper
- Sour Cream–or plain greek yogurt
- Milk–or evaporated milk
- White Wine Vinegar–or red wine vinegar
Steps
Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Brown for 5 minutes. Drain off excess grease. Stir in the ranch dressing mix.

Add in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Sprinkle in the penne and then dump the mushrooms on top. Sprinkle in onion powder, garlic powder and a big pinch of kosher salt and pepper.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes. Move valve to venting. Remove the lid.

Stir in the sour cream, milk and vinegar.

Scoop onto plates and serve.

can this Ranch Beef Noodles recipe be made in a slow cooker and what are the instructions, please and thank you for your time and help.
I don’t love making this pasta in the slow cooker…it doesn’t come out consistent. Sorry!
Your pictures look like it has stew meat, not hamburger. I think that type of meat would be better.
Also, there’s a lot of liquid. I used cornstarch to thicken it up, but would probably skip the milk like another commenter said.
This recipe is so so simple. My guys & I loved it. We left out the vinegar. It just seemed kinda odd. Still very tasty.
That’s awesome! Simple + tasty is always a win. Thanks so much for the feedback!
Made this recipe in the insta pot. Flavor was good and reminded me of beef stroganoff.
I used fresh mushrooms and I believe that’s what made it a little watery. If I use fresh mushrooms again next time, I would omit adding the milk at the end.
Yep, fresh mushrooms can definitely make it looser. I love your plan to adjust the milk next time—thanks for sharing!
can you make this in a slow cooker instead?
I’m wondering the same thing
This one isn’t a great candidate for the slow cooker! Pasta is not consistent in the slow cooker.
