Description
An easy Instant Pot recipe with seasoned ground beef, tender penne, sliced mushrooms and a creamy sour cream sauce.

- 16 oz lean ground beef
- 4 Tbsp Hidden Valley dry ranch dressing mix
- 2 1/2 cups beef broth
- 8 oz penne
- 1 (7.4 oz) can sliced mushrooms, drained
- 1 tsp onion powder
- 1 tsp garlic powder
- Kosher salt
- Pepper
- 1/2 cup sour cream
- 1/2 cup milk
- 1 Tbsp white wine vinegar
Instructions
- Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Brown for 5 minutes. Drain off excess grease. Stir in the ranch dressing mix.
- Add in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Sprinkle in the penne and then dump the mushrooms on top. Sprinkle in onion powder, garlic powder and a big pinch of kosher salt and pepper.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes. Move valve to venting. Remove the lid.
- Stir in the sour cream, milk and vinegar.
- Scoop onto plates and serve.
