Description

An easy Instant Pot recipe with seasoned ground beef, tender penne, sliced mushrooms and a creamy sour cream sauce.


Ingredients

Scale
  • 16 oz lean ground beef
  • 4 Tbsp Hidden Valley dry ranch dressing mix
  • 2 1/2 cups beef broth
  • 8 oz penne
  • 1 (7.4 oz) can sliced mushrooms, drained
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Kosher salt
  • Pepper
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 Tbsp white wine vinegar

Instructions

  1. Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Brown for 5 minutes. Drain off excess grease. Stir in the ranch dressing mix.
  2. Add in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Sprinkle in the penne and then dump the mushrooms on top. Sprinkle in onion powder, garlic powder and a big pinch of kosher salt and pepper.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes. Move valve to venting. Remove the lid.
  5. Stir in the sour cream, milk and vinegar. 
  6. Scoop onto plates and serve.
