Pioneer Chicken Casserole

Today’s recipe is my Instant Pot adaption of The Pioneer Woman’s chicken spaghetti. I love how simple this one is to throw together. The pasta turned out super creamy, flavorful and satisfying. The leftovers were just as good or better the next day. If you have cooked chicken (like rotisserie chicken) on hand you can forego the first step and this one would be super fast! I just had frozen chicken thighs in my freezer so I had to cook those first before going on to the next step of cooking the pasta. It was all worth it in the end for a yummy Sunday supper. Enjoy!

Ingredients/Substitution Ideas

  • Chicken broth–or water and Better than Bouillon chicken base
  • Boneless skinless chicken thighs–or chicken breast
  • Seasoned salt
  • Angel hair pasta–or thin spaghetti
  • Onion–or shallot
  • Diced green chiles
  • Cream of chicken soup–or cream of mushroom
  • Cayenne pepper–or red pepper flakes
  • Pimentos–or roasted red peppers
  • Shredded cheddar cheese–or Monterey Jack or pepper jack
  • Bacon crumbles–or cooked and crumbled bacon

Steps

Add broth and chicken into Instant Pot. Sprinkle the chicken with seasoned salt.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 10 minutes. When time is up move valve to venting. Remove the lid.

Break up the pasta in half and lay it in criss cross pattern in the pot. Dump the onion, green chiles, cream of chicken and cayenne on top. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 5 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Stir in the pimentos, cheddar and bacon. Break up the chicken into pieces. 

Serve and enjoy!

Notes/Tips

  • Serve with garlic bread and roasted broccoli or a salad.
  • Break the angel hair in half and layer it in a criss-cross pattern to help prevent clumping
  • I used my 6 quart Instant Pot*. You can also make this in a 4* or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 3-4 days. Freezing is not ideal since the pasta can get mushy, but you can freeze it if needed.

Description

An Instant Pot dinner of creamy angel hair pasta with bacon, chicken, green chiles and cheddar.  


Ingredients

Scale
  • 2 cups chicken broth
  • 24 oz boneless skinless chicken thighs (frozen is okay)
  • 1/2 tsp seasoned salt
  • 8 oz angel hair
  • 1/2 cup diced onion
  • 1 (4 oz) can diced green chiles
  • 1 (10.5 oz) can cream of chicken soup
  • Pinch of cayenne pepper
  • 4 oz pimentos
  • 1 cup shredded cheddar
  • 1 (2.8 oz) package bacon crumbles

Instructions
