Amish Sunday Casserole–old fashioned eggs noodles with chicken, spinach, mushrooms and parmesan cheese. Made fast in the Instant Pot.

Amish Sunday Casserole

This dinner is one of those meals where I just think “Wow! I made that in the Instant Pot?!” These noodles with mushrooms, spinach, chicken and parmesan are so easy to make…pretty much hands off (except for sautéing the mushrooms) but they turn out so delicious and satisfying.

Find the “homemade” egg noodles at your grocery store by the other pastas. They are so tasty and don’t cost much more than regular pasta. They taste great in chicken noodle soup too!

Ingredients/Substitution Ideas

  • Butter–or oil
  • Mushrooms
  • Water
  • Better than Bouillon chicken base
  • Old fashioned egg noodles–I used Mrs. Miller’s brand
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Onion powder
  • Cooked chopped chicken–I used Costco rotisserie chicken that I had frozen. You can also use raw chicken that has been cut into small bite size pieces (it will cook in the 3 minutes!).
  • Parmesan cheese
  • Spinach–fresh or frozen
  • Heavy cream–or half and half, evaporated milk, milk

Steps

Turn Instant Pot to saute setting. Add in the butter and let it melt. Add in the mushrooms and saute for 4 minutes. 

Pour in the water and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Stir in the bouillon. Sprinkle in the noodles.

Then add in the salt, pepper, garlic powder, onion powder and chicken.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Stir in the parmesan, spinach and cream.

Serve and enjoy!

Notes/Tips

  • Serve with salad and garlic bread.
  • I found the special homemade egg noodles next to the regular pastas. They look more homemade and they taste really great in this recipe! If you can’t find these egg noodles you can use regular egg noodles but only pressure cook for 1 minute instead of 3 minutes.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

Ingredients

Scale
  • 2 Tbsp butter
  • 4 oz mushrooms, quartered
  • 2 cups water
  • 1 Tbsp Better than Bouillon chicken base
  • 8 oz old fashioned egg noodles (I used Mrs Miller’s brand, see photo above)
  • 1/2 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 cups cooked chopped chicken
  • 1/3 cup shredded parmesan cheese
  • 2 cups chopped spinach
  • 1/4 cup heavy cream

Instructions
