Country Gentlemen Casserole

Today’s recipe is a flavorful, creamy dump and go chicken pasta. The pasta cooks right in the broth, soaking up all the flavor, and the cream cheese melts creating a silky sauce. This recipe is flexible. You can use uncooked chicken or rotisserie chicken, small shell pasta or elbow macaroni, spinach or another veggie of your choice. It’s a little country and a little fancy. Enjoy!

Ingredients/Substitution Ideas

  • Chicken broth–or water and Better than Bouillon chicken base
  • mall shell pasta–or elbow macaroni
  • Boneless skinless chicken thighs–or chopped rotisserie chicken
  • Smoked paprika–or regular paprika
  • Kosher salt–or sea salt
  • Black pepper–or white pepper
  • Garlic powder–or 1 Tbsp minced garlic
  • Onion powder–or 2 Tbsp dried minced onion
  • Dried thyme
  • Crushed rosemary
  • Rubbed sage
  • Sliced mushrooms–or 8 oz fresh mushrooms, sliced or chopped
  • Cream cheese
  • White wine vinegar–or lemon juice
  • Frozen sweet corn–or canned corn (drained)
  • Chopped spinach–or kale
  • Parmesan cheese–or pecorino romano

Steps

Pour broth into Instant Pot. Sprinkle in the shell pasta. Lay chicken evenly on top of the pasta. Sprinkle the chicken with smoked paprika, salt, pepper, garlic powder, onion powder, thyme, rosemary and sage. Dump the mushrooms and cream cheese on top.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 3 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.

Stir in the vinegar, corn, spinach and parmesan.

Serve and enjoy!

One-Pot Creamy Chicken Shells

Notes/Tips

  • Serve with garlic bread and roasted vegetables.
  • I used my pink 4 quart Instant Pot*. You can also make this in a 3, 6 or 8 quart pot.
  • If using rotisserie chicken, stir it in after pressure cooking to keep it from overcooking.
  • You can add extra veggies like carrots, peas or bell peppers for more texture and nutrition.
  • The cream cheese will look a little clumpy at first after cooking, but it smooths out as you stir.
  • Reheat with a little extra broth or milk to loosen the sauce.
  • Store leftovers in an airtight container* in the refrigerator for up to 3-4 days. This can be frozen, but the texture of the pasta may soften slightly.

Description

An easy Instant Pot creamy chicken pasta with mushrooms, spinach and parmesan cheese. 


Ingredients

Scale
  • 2 cups chicken broth
  • 8 oz small shell pasta
  • 1 1/2 pounds boneless skinless chicken thighs, cut into bite size pieces (or 3 cups chopped rotisserie chicken)
  • 1/4 tsp smoked paprika
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • 1/2 tsp crushed rosemary
  • 1/2 tsp rubbed sage
  • 1 (4 oz) can sliced mushrooms, drained
  • 4 oz cream cheese
  • 1 tsp white wine vinegar
  • 1 cup frozen sweet corn
  • 1 cup chopped spinach
  • 1/2 cup shredded parmesan cheese

Instructions

    This sounds delicious! Could I use Gluten-Free pasta in this and other recipes? Would times or measurements change?

      You can try the gluten free pasta. I’ve had good success with the Banza brand, especially their rotini. I tend to like it cooked for a shorter time than what I list on the recipes. Usually 3 minutes works.

      Yes, you can definitely make this on the stovetop! Just simmer the chicken in the broth and seasonings until cooked through, then remove and shred. Cook the pasta separately, then stir everything together with the cream cheese and add-ins at the end.

    If I were to use cooked ground beef instead of chicken would the order of ingredients be the same? And what can I substitute for the cream cheese? Thanks

      Yes, that will work great! I’d just brown the ground beef first and drain any grease, then layer everything the same way. For the cream cheese, you can use heavy cream or a little half and half for a creamy texture.

    I have a general question regarding your recipes that call for chicken thighs or breasts cut into pieces.
    Could I substitute tenderloins in every situation, or would it be recipe specific to do so?

      I would say that if they are fresh and not frozen they can be used in every situation. If they are frozen it would vary. Hope this helps!
