Miss Georgie’s Casserole–an easy and delicious recipe to use up leftover turkey! Bowtie pasta and turkey are enveloped in a creamy sauce. Make it in minutes in your Instant Pot.

Miss Georgie’s Casserole

If you have any leftover turkey after Thanksgiving this is a perfect recipe to make! It totally hit the spot. It’s got bowtie pasta, peppers, cheddar and a bit of sour cream. It’s a super satisfying dinner that comes together quickly. It’s a great way to reinvent leftovers without feeling like you’re eating the same meal twice. (This recipe was adapted from Miss Georgie’s Casserole).

Ingredients/Substitution Ideas

  • Butter
  • Diced Onion–or shallot
  • Chicken Broth–or water and Better than Bouillon chicken base
  • Garlic Powder
  • Black Pepper
  • Kosher Salt
  • Poultry Seasoning
  • Farfalle Pasta–or penne
  • Diced Green Bell Pepper
  • Diced Leftover Turkey–or rotisserie chicken
  • Canned mushrooms–or fresh
  • Sour Cream–or plain greek yogurt
  • Pimentos
  • Shredded Cheddar Cheese–I used sharp

Steps

Turn Instant Pot to sauté setting. When display says HOT add in the butter and let it melt. Add in the onion and sauté for 3-4 minutes. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Add in the garlic powder, pepper, salt poultry seasoning, farfalle, green bell pepper, turkey and mushrooms.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 

Stir in the sour cream, pimentos and cheese. 

Serve and enjoy!

Notes/Tips

  • Serve with steamed or roasted green beans, asparagus or broccoli.
  • I used my 4 quart Instant Pot*. You can also make this in a 3, 6 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Ingredients

Scale
  • 1 Tbsp butter
  • 1/2 cup diced onion
  • 2 cups chicken broth
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1/2 tsp kosher salt
  • 1/2 tsp poultry seasoning
  • 5 oz farfalle pasta
  • 1/2 cup diced green bell pepper
  • 2 cups diced leftover turkey (or chicken)
  • 1 can of sliced mushrooms, drained
  • 1/2 cup sour cream
  • 2 Tbsp pimentos
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Turn Instant Pot to sauté setting. When display says HOT add in the butter and let it melt. Add in the onion and sauté for 3-4 minutes.

  5. Stir in the sour cream, pimentos and cheese. 
  6. Serve and enjoy!
