Midwest Chicken Casserole–a cheesy chicken, broccoli, and orzo dish that comes together in minutes in the Instant Pot.

Midwest Chicken Casserole
Today’s recipe is the perfect weeknight dinner since you’ve got your protein, veggies, starch, and creamy sauce all in one pot with almost no cleanup. Plus, it reheats beautifully, so you can scoop some into containers and have an amazing lunch waiting for you the next day. This is a dump and go recipes and the pressure cooking time is only one minute! By the time the pot comes to pressure and releases, you’ve got a hot, homemade meal on the table in under 30 minutes. (For this recipe I purposely layered the ingredients and didn’t stir because it helps prevent the orzo from sticking to the bottom and burning). This recipe is adapted from Midwest Chicken Casserole on Fit Foodie Finds.
Ingredients/Substitution Ideas
- Chicken broth–or water and Better than Bouillon chicken base
- Onion–yellow or white
- Carrot
- Mushrooms
- Orzo
- Garlic powder
- Kosher salt
- Black pepper
- Poultry seasoning
- Rotisserie chicken–or cooked chopped chicken
- Broccoli
- Heavy cream
- Cheddar cheese–I like sharp
- Parmesan cheese
Steps
Pour broth into Instant Pot. Add in the onion, carrots and mushrooms.

Sprinkle the orzo on top. Sprinkle in the garlic powder, salt, pepper, poultry seasoning. Add chicken and broccoli on top. Don’t stir.


Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 1 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Stir in the cream, cheddar and parmesan.


Serve and enjoy!

Notes/Tips
- This is an all in one pot meal but you can serve alongside a salad and breadsticks.
- Only 1 minute of pressure cook time? Yep…orzo cooks fast!
- Fresh rotisserie chicken makes this recipe extra easy, but you can also use leftover baked or grilled chicken. I buy rotisserie chicken from Costco and freeze in 1 cup portions.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

- 2 oz sliced mushrooms
- 4 oz orzo
- 1 tsp garlic powder

I didn’t have any mushrooms and I used half & half but the rest of the recipe was followed exact. I’m just mad that I didn’t double it! This will definitely be made again and again.
I probably did use 1 1/2 cups of chicken and I only had baby carrots so I weighed out 3.5 ounces and chopped up some. I always keep rotisserie chicken in the freezer so this came together super quickly. Great week night dinner!
