Minneapolis Miracle Casserole–a creamy, cheesy Instant Pot pasta dish with chicken, crispy bacon, ranch seasoning, and spinach, all cooked in one pot for an easy, flavorful meal.

Minneapolis Miracle Casserole
Today’s recipe is adapted from a recipe on Minnesota’s New Country. The author stated, “January 14th, 2021 marks the three year anniversary of the moment all Vikings fans will remember forever: The Minneapolis Miracle. As we watched that game against the Saints, almost everyone in my house had given up hope. The score was 24-23, and there were only seconds left in the 4th quarter. I was making comfort food to try to ease the pain of loss, and as I pulled this hotdish out of the oven, it happened. On the last play of the game, Vikings quarterback Case Keenum threw a 27-yard pass to wide receiver Stefon Diggs, who ran to the end zone to complete the 61-yard touchdown pass and win the game.” LOVE IT!
My version is made in the Instant Pot and uses dry ranch dressing mix as the seasoning instead of ranch dressing. I also added in spinach to give the dish a pop of color. It’s quick, easy and packed with flavor. Enjoy!
Ingredients/Substitution Ideas
- Thick cut bacon
- Chicken broth–or water and Better than Bouillon chicken base
- Penne pasta–or another short cut pasta
- Dry ranch dressing mix–I used Hidden Valley brand
- Rotisserie chicken–or 1 pound raw chicken breasts cut into cubes
- Colby jack cheese–or sharp cheddar
- Sour cream
- Spinach
Steps
Cook bacon until crispy and crumble. I cooked mine in my air fryer. Set aside.
Pour broth into Instant Pot. Add in the penne, ranch and chicken.
Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Stir in the cheese, sour cream, spinach and bacon.


Serve and enjoy!

Notes/Tips
- Serve with a green salad and garlic bread.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot. This recipe can easily be doubled.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

- 2 Tbsp dry ranch dressing mix
- 2 cups rotisserie chicken (or 1 pound raw chicken breasts cut into cubes)
- 1 cup shredded colby jack cheese
- 3 Tbsp sour cream
- 2 cups chopped spinach
