An easy Instant Pot recipe of cubed red potatoes in a sour cream sauce with cheese.


  • 6 small to medium red potatoes
  • 1 shallot, minced
  • 2 Tbsp butter
  • 1 cup sour cream
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp dried parsley
  • 1/2 cup shredded cheddar cheese


  1. Wash the potatoes and cut them into half inch cubes. Place the cubed potatoes into a steamer basket.
  2. Pour 1 ½ cups water into bottom of Instant Pot. Drop the steamer basket into the Instant Pot.
  3. Cover the Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up move valve to venting to remove pressure. Remove the lid. Move the potatoes out of the pot. Discard the water.
  4. Turn Instant Pot to saute (normal) setting and melt the butter. Add in the shallot. Saute until soft and translucent. 
  5. Stir in the sour cream, salt, pepper, garlic powder, parsley. Turn off Instant Pot. Fold in the potatoes and cheese.
  6. Serve and enjoy!
