Description
An easy Instant Pot recipe of cubed red potatoes in a sour cream sauce with cheese.

- 6 small to medium red potatoes
- 1 shallot, minced
- 2 Tbsp butter
- 1 cup sour cream
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- 1/2 tsp dried parsley
- 1/2 cup shredded cheddar cheese
Instructions
- Wash the potatoes and cut them into half inch cubes. Place the cubed potatoes into a steamer basket.
- Pour 1 ½ cups water into bottom of Instant Pot. Drop the steamer basket into the Instant Pot.
- Cover the Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up move valve to venting to remove pressure. Remove the lid. Move the potatoes out of the pot. Discard the water.
- Turn Instant Pot to saute (normal) setting and melt the butter. Add in the shallot. Saute until soft and translucent.
- Stir in the sour cream, salt, pepper, garlic powder, parsley. Turn off Instant Pot. Fold in the potatoes and cheese.
