My Man’s Casserole–An easy and delicious meat and potato casserole that is made quickly in your Instant Pot.

Instant Pot My Man’s Casserole
Potatoes, seasoned ground beef, a creamy sauce, juicy corn and melty cheese all make up this Greg-loving casserole. It’s really an easy weeknight meal and everyone loves it, not just Greg. Haha!
Ingredients/Substitution Ideas
- Thinly sliced potatoes–I used peeled Russet potatoes. You can also use another variety of potato. I sliced them about a quarter inch thick.
- Cream cheese–or Neufchâtel
- Milk
- Garlic powder
- Black pepper
- Onion powder
- Frank’s hot sauce–optional
- Lean ground beef–or ground turkey
- Kosher salt
- Can of corn–you can also use fresh or frozen corn
- Colby jack cheese–or another type of cheese like cheddar
Steps
- Prepare Instant Pot: Pour 1 ½ cups water into bottom of Instant Pot. Add potatoes to a steamer basket and then lower the basket into the Instant Pot.
- Pressure cook potatoes: Cover Instant Pot and lock the lid into place. Make sure valve is set to sealing. Set the manual/pressure cook time to 1 minute for barely done potatoes or 2 minutes for softer potatoes. When time is up move the valve to venting and remove the steamer basket. Set aside.
- Make the creamy sauce: While the potatoes are cooking add cream cheese (it must be softened or else this doesn’t work great), milk, garlic powder, pepper, onion powder and wing sauce to a bowl. Use a hand mixer to whip the mixture until creamy and smooth. Set aside.
- Brown ground beef: Dump the water out of the bottom of the Instant Pot and dry it out. Turn Instant Pot to sauté setting. When display says HOT add in the ground beef and break it up. Brown for about 5 minutes, until cooked through. Drain any excess grease. Stir in the kosher salt.
- Combine it all: Gently stir in the potatoes, the cream cheese mixture and the corn.
- Get cheesy: Sprinkle the cheese on top and use an air fryer lid to melt the cheese (300 degrees for 3 minutes). If you don’t have an air fryer lid then put the normal lid and turn the pot to the keep warm setting and let the cheese melt for about 5-10 minutes.
- Serve: Scoop onto plates and serve.
Equipment I used
- I used my 6 quart Duo Crisp Instant Pot*. This is an Instant Pot with an air fryer lid. You can also make this in a 8 quart pot.
- Silicone steamer basket*
- Sauté paddle*
- Knife* for slicing the potatoes
- Potato peeler*
- Cutting board*
- Hamburger chopper tool*
Notes/Tips
- What if I don’t have a steamer basket? If you have a trivet place that in the pot. Try placing as many potato slices on top of the trivet as you can. Some will fall through into the water but that’s okay.
- Serve with broccoli or a green salad.
- Try adding in some sliced carrots in the bottom of the steamer basket with the potatoes for more veg and color.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

I made this in the oven. Cooked the potatoes and browned the ground beef on the stovetop. And baked at 350 degrees for 20 minutes to melt the cheese. i used an immersion blender to blend up the sauce. It came out delicious!

Not sure what I did wrong, but my potatoes were not cooked after 2 min. Going to try a few more min and letting the pressure release naturally.

This looks great! Do you think it could be modified for a crock pot?
I haven’t tried it yet but you could add browned ground beef to the slow cooker. Toss with all the other ingredients (except cheese). Use evaporated milk instead of regular milk to prevent curdling. Slow cook for 4-6 hours or until potatoes are cooked through. Sprinkle with cheese and let it melt then serve.
We do a crockpot version that’s made with cream of mushroom instead of this sauce, really good, you add everything but cheese and when potatoes are done add the cheese on to you done
Any substitution suggestions for the potatoes or could they be eliminated?
Hmmm, it’s the base of the recipe so I’m not sure how this would go. But you could try using cauliflower florets in the place of the sliced potatoes.
