Instant Pot Poor Man’s Meal–an easy and cheap 6 ingredient recipe of meat and potatoes. Make it fast in your Instant Pot.

Instant Pot Poor Man’s Meal

This is a super fast and easy meal that tastes great. My household was a big fan! If you buy the ground beef (or ground turkey) on sale you can make this meat and potatoes meal that will feed 4-6 people for around $10. We all need these types of recipes in our back pocket.

Ingredients/Substitution Ideas

  • Russet potatoes–you can also use red potatoes with the skins on
  • Ground beef–or ground turkey
  • Seasoning salt–I used Lawry’s brand
  • Black pepper
  • Canned corn–you can also use frozen corn
  • Diced green chiles–optional…these just add a bit of flavor. You can also use a quarter cup of salsa.

Steps

  1. Pressure cook the potatoes: Pour 1 ½ cups of water into bottom of Instant Pot. Add potatoes to a steamer basket. Drop the steamer basket into the Instant Pot. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up move the valve to venting and remove the lid. (I used the avokado steamer basket*).
  2. Remove the steamer basket of potatoes and set aside. Discard the water and dry out the pot. 
  3. Brown the ground beef: Turn Instant Pot to sauté setting. When displays says HOT add in the ground beef and brown. Drain off excess grease. Stir in ¾ tsp of the seasoning salt. 
  4. Add in remaining ingredients: Gently stir in the potatoes, 1 tsp of seasoning salt, pepper, corn and green chiles.
  5. Serve: Scoop onto plates and serve. If desired serve with a little shredded cheese and ketchup on top.

Notes/Tips

  • You can serve this dinner with a side salad or some fruit, like watermelon.
  • I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
  • I used a silicone steamer basket* to cook the potatoes in.
  • Try an alternative version: instead of using diced green chiles add in a half cup of diced dill pickles. Serve topped with a squirt of mustard and ketchup. If you add cheese to the top it will taste like a cheeseburger meal.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • This recipe is gluten-free. This recipe is dairy free if you forego the cheese on top.

Ingredients

  • 2 pounds Russet potatoes, peeled and cubed
  • 1 pound ground beef
  • 1 3/4 tsp seasoning salt
  • 1 tsp black pepper
  • 1 (15.25 oz) can corn, drained
  • 1 (4 oz) can diced green chiles (optional)
