Morning After Casserole
This casserole has become my go-to breakfast casserole recipe! It’s easy to make the night before and then bake in the morning. It’s easy to double or halve. This time around I doubled it and baked it in one of these large foil pans from Sam’s Club because I was serving it to Skyler and his friends. I like the combination of potatoes, sausage and eggs. The addition of green chiles is perfect for some extra flavor. Next time you need a breakfast casserole try this one out…it may just become your go-to recipe too!
Ingredients/Substitution Ideas
- Ground sausage–or ground turkey sausage
- Onion–or shallot
- Diced green chiles
- Eggs
- Milk–or half-and-half
- Sour cream–or plain Greek yogurt
- Kosher salt–or sea salt
- Black pepper
- Frozen tater tots–or frozen diced hash browns
- Sharp cheddar cheese–or Colby Jack

Notes/Tips
- Serve with fresh fruit or orange juice.
- This casserole is perfect for holidays, brunch gatherings, or busy mornings because it can be assembled up to 24 hours in advance and stored in the refrigerator before baking.
- Make sure the tater tots are arranged in one even layer so the casserole bakes evenly.
- You can easily add vegetables like diced bell peppers, mushrooms or spinach to the sausage mixture for extra flavor and nutrition.
- Halve the recipe in a 8×8 baking dish. Or double the recipe in 2-9×13 inch baking dishes or one large 21×13 inch foil pan.
- Let the casserole rest for about 10 minutes after baking before slicing so the pieces hold together better.
- Store leftovers in an airtight container* in the refrigerator for up to 4-5 days.

Ingredients
- 16 ounces ground sausage (I use Jimmy Dean brand)
- 1/2 cup diced onion
- 1 (4 oz) can diced green chiles
- 6 large eggs
- 1 cup milk
- 1/2 cup sour cream
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 24 oz frozen tater tots (I like Ore-Ida brand)
- 2 cups shredded sharp cheddar cheese
Instructions
- Heat a large pan over medium high heat. Add in the sausage and break it up. Add in the onions. Brown for about 5 minutes. Drain off excess grease. Stir in the green chiles.
- In a medium bowl, whisk together the eggs, milk, sour cream, salt and pepper.
- Spray a 9×13 inch pan with non-stick cooking spray. Add the tater tots in the bottom of the pan in a single layer.
- Add the sausage mixture over the tots. Sprinkle on the cheese. Finally pour the egg mixture over the top.
- Cover the pan tightly with foil and refrigerate for up to 24 hours.
- When ready to bake heat the oven to 350° F. Bake with the foil on for 30 minutes. Uncover and bake for 30-45 minutes longer until set. Add additional time, if needed.
