Morning After Casserole

Ingredients

  • 16 ounces ground sausage (I use Jimmy Dean brand)
  • 1/2 cup diced onion
  • 1 (4 oz) can diced green chiles
  • 6 large eggs
  • 1 cup milk
  • 1/2 cup sour cream
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 24 oz frozen tater tots (I like Ore-Ida brand)
  • 2 cups shredded sharp cheddar cheese

Instructions

  1. Heat a large pan over medium high heat. Add in the sausage and break it up. Add in the onions. Brown for about 5 minutes. Drain off excess grease. Stir in the green chiles.
  2. In a medium bowl, whisk together the eggs, milk, sour cream, salt and pepper.
  3. Spray a 9×13 inch pan with non-stick cooking spray. Add the tater tots in the bottom of the pan in a single layer. 
  4. Add the sausage mixture over the tots. Sprinkle on the cheese. Finally pour the egg mixture over the top. 
  5. Cover the pan tightly with foil and refrigerate for up to 24 hours.
  6. When ready to bake heat the oven to 350° F. Bake with the foil on for 30 minutes. Uncover and bake for 30-45 minutes longer until set. Add additional time, if needed. 
  7. Slice and serve.
