Aunt Millie’s Breakfast Casserole–a savory tater tot breakfast casserole with crispy bacon, green chiles, cheddar cheese and fluffy eggs.

Aunt Millie’s Breakfast Casserole

This surprisingly easy breakfast (or breakfast for dinner) casserole is so good! Even my son, who typically doesn’t like breakfast casseroles, was raving about it. It makes great leftovers for a quick and easy grab and go breakfast too. You can double the recipe and freeze individual portions just for that purpose.

Ingredients/Substitution Ideas

  • Tater tots–I like the Ore-Ida brand
  • Eggs
  • Milk–or evaporated milk, half and half
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Onion powder
  • Diced green chiles–I used mild
  • Bacon crumbles–I buy the big bag from Costco
  • Sharp cheddar cheese–or colby jack, mexican blend

Steps

Heat oven to 350° F.

Spray a 9×9 inch baking dish with non-stick cooking spray. Spread the tots in the bottom of the pan.

In a mixing bowl whisk the eggs, milk, salt, pepper, garlic powder, onion powder, green chiles, bacon crumbles and cheese.

Pour the mixture over the tots.

Bake for 40-45 minutes. 

Slice and serve. Top with salsa, if desired.

Notes/Tips

  • Serve with toast, fresh fruit and orange juice.
  • Would sausage or ham work instead of bacon? Yes! Try sausage crumbles or cubed ham instead of bacon.
  • Can I add vegetables? Yes! Try some of these:
    • Bell Peppers – Diced small
    • Spinach – Chopped
    • Mushrooms – Sauté first to remove excess moisture
    • Onions – Diced; can be added raw or sautéed for a milder flavor.
    • Zucchini – Grated and squeezed dry to prevent sogginess.
    • Tomatoes – Diced and deseeded to avoid excess liquid.
    • Jalapeños – For a spicy kick!
  • Can I prepare this the night before and bake it in the morning?
    • Yes. Prepare the casserole and cover with foil and refrigerate overnight. Then when ready to bake preheat oven to 350° F. Bake for 50-60 minutes, uncovered.
  • Double this recipe by cooking in a 9×13 inch baking dish. You may need to increase cooking time by 5-10 minutes.
  • Can I make this in muffin tins for individual servings?
    • Use a standard 12-cup muffin tin and spray it well with non-stick cooking spray. Place 2-3 tater tots in each cup. Pour the egg mixture evenly over each cup, filling about ¾ full (they will puff up slightly). Bake at 350°F for 18-22 minutes, or until the eggs are set and the tops are lightly golden. Check for doneness by inserting a toothpick…it should come out clean. Let them cool for a couple of minutes before removing them from the tin.
  • This recipe can be gluten free if you use gluten free tater tots.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • To reheat:
    • Air Fryer: Heat at 350°F for 5-7 minutes until warmed and slightly crispy.
    • Microwave (quickest): Heat individual slices for 30-60 seconds. Cover with a damp paper towel to prevent drying.

Ingredients

  • 12 ounces tater tots
  • 6 large eggs
  • 1/3 cup milk
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 (4 oz) can diced green chiles
  • 1/3 cup bacon crumbles
  • 1/2 cup shredded sharp cheddar cheese

Instructions

  1. Heat oven to 350° F.
  2. Spray a 8×8 or 9×9 inch baking dish with non-stick cooking spray. Spread the tots in the bottom of the pan.
  3. In a mixing bowl whisk the eggs, milk, salt, pepper, garlic powder, onion powder, green chiles, bacon crumbles and cheese.
  4. Pour the mixture over the tots.
  5. Bake for 40-45 minutes. 
  6. Slice and serve. Top with salsa, if desired.

    bacon was left out of the mixing instructions. I would just spread them over the tots and then pour over the egg mixture.
