Monterey Chicken Casserole
This easy chicken casserole is perfect to make on a night when you have cooked chopped chicken in your fridge ready to go. It makes it so fast and easy to put this together and then all you have to do is wait for it to bake. I love buying the rotisserie chicken at Costco for casseroles like this. I like to take the meat off the chicken and store about 2 cups in individual ziploc bags. This recipe works because it hits that perfect combo of creamy, savory, cheesy and crunchy. Enjoy!
Ingredients/Substitution Ideas
- Cooked chicken–like rotisserie chicken or this basic shredded instant pot chicken
- Monterey jack cheese
- Sour cream
- Cream of chicken soup–or cream of mushroom
- Spinach–or chopped kale
- Ranch dressing mix–or Italian dressing mix
- French fried onions–or crushed Ritz crackers or panko mixed with butter
Steps
Heat oven to 350° F. In a bowl stir together chicken, cheese, sour cream, cream of chicken soup, spinach, ranch dressing mix and half of the french fried onions.

Spread the mixture into a 8×8 inch baking dish.

Sprinkle remaining onions on the top.

Bake for 40 minutes. Serve and enjoy!

Notes/Tips
- Serve with rice, noodles or mashed potatoes.
- Green salad or roasted veggies makes a great fresh side.
- Try adding in extra veggies like cubed zucchini and chopped mushrooms.
- Try swapping out the spinach for peas instead.
- You can assemble this ahead of time, cover, and refrigerate until ready to bake.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

- 3 oz chopped spinach (fresh or frozen)
- 1 Tbsp ranch dressing mix
- 1 cup french fried onions
Instructions
