Slow Cooker Dizzy Chicken

Dizzy Chicken Casserole

When you’re running around like a chicken with your head cut off but you still need to make dinner try this EASY and DELICIOUS dinner. It’s only got 5 ingredients and takes minimal prep time. Plus it’s made in your slow cooker which will give you the opportunity to make dinner NOT at dinner time and give you flexibility on when to eat. This is the perfect meal for the dizzy busy days. Enjoy!

Ingredients/Substitution Ideas

  • Rotisserie chicken–or chopped cooked chicken
  • Converted rice–or long grain white rice
  • Chicken broth–or water and Better than Bouillon chicken base
  • Herdez guacamole salsa–I like mild. We love this stuff at our house!
  • Monterey jack cheese–you can also use colby jack, pepper jack or cheddar.

Steps

Add chicken, rice and heated broth into slow cooker. Drizzle the salsa over the top.

Cover slow cooker and cook on HIGH for 2 ½ to 3 hours. 

Sprinkle the cheese on top and let it melt. Serve and enjoy!

Notes/Tips

  • Serve with shredded lettuce, pico de gallo, sour cream and cilantro.
  • For this recipe I went with my 3.5-quart casserole crock made by the Crock-Pot brand.* I have loved this casserole shaped crockpot for recipes just like this. I love that the crock insert is completely oven and dishwasher safe. I love how if you want to brown the top of a casserole you can do that quickly in the oven after it cooks all day in the slow cooker. Or if you want to bake something in the oven and then put it into the crockpot and keep it warm on the counter, you can do that too. They cost around $70 and I think totally worth the investment. You can also make this in a normal slow cooker.
  • Remember each slow cooker cooks at different rates. Older Crockpots tend to cook slower and newer slow cookers tend to cook faster. I cooked this for 2 hours and 40 minutes and it was perfect for me.
  • This recipe is gluten free.
  • Can I use raw chicken? You can use cut up pieces of raw chicken. They will cook at the same rate as the rice. I would suggest using 1 inch pieces of boneless skinless chicken thighs.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Ingredients

Scale
  • 3 cups rotisserie chicken
  • 1 cup uncooked converted rice
  • 1 1/2 cups boiling chicken broth
  • 1 cup Herdez guacamole salsa (I like mild)
  • 1 cup shredded monterey jack cheese

Instructions

  1. Add chicken, rice and heated broth into slow cooker. Drizzle the salsa over the top.
  2. Cover slow cooker and cook on HIGH for 2 ½ to 3 hours. 
  3. Sprinkle the cheese on top and let it melt.
  4. Serve and enjoy!

    It’s delicious! My husband and I loved it. I have an older crockpot so I had to cook it a little bit longer for the rice to be done. I will definitely be making this again

      Beth: If you want the green color of this dish, Salsa Verde could work, too (Trader Joe’s has a good one).

      Salsa instead of guacamole I would think.

      Brown rice sure, just check on it after 2-3 hours.

      Yes I think that would work fine. You may want to increase the liquid by a quarter cup.
