Heavenly Angel Chicken Casserole–an easy one-pot dinner made with tender chicken thighs, ranch seasoning, rice, corn, and a rich parmesan cream sauce made with your Instant Pot.

Angel Chicken and Rice
Today’s recipe is a creamy chicken and rice that you can make fast in the Instant Pot. Angel chicken casserole is usually made with a can of cream of chicken soup. But my version leaves that out and uses cream cheese instead which is even better and more creamy! I threw in some sweet corn too which just adds little pops of sweetness. If you want to make a southwest version of this try adding in a couple cans of diced green chiles. Enjoy!
Ingredients/Substitution Ideas
- Chicken broth–or water and Better than Bouillon chicken base
- Converted rice–or long grain white rice
- Boneless skinless chicken thighs
- Dry ranch dressing mix–or dry Italian dressing mix
- Kosher salt
- Black pepper
- Garlic powder
- Butter
- Frozen sweet corn
- Cream cheese–or Neufchâtel cheese
- Half and half–or heavy cream
- Shredded parmesan cheese–or grated romano cheese
Steps
Pour broth into Instant Pot. Add in half of the chicken, sprinkle in the rice, then add remaining chicken on top. Sprinkle in the ranch dressing mix, salt, pepper and garlic powder. Dump in the butter, corn and cream cheese.


Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes. Move valve to venting and remove the lid.

Stir in the half and half and the parmesan cheese.

Serve and enjoy!

Notes/Tips
- Serve with steamed green beans or broccoli.
- This recipe can be gluten free. Check your ranch dressing mix packaging.
- If you want to add more vegetables, stir in spinach or peas after pressure cooking.
- I used my 4 quart Instant Pot*. You can also make this in a 3, 6 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 3-4 days. This dish can be frozen, but the dairy may separate slightly when reheated. Stirring well and reheating slowly helps bring it back together.
