Description

A cheesy chicken, broccoli, and orzo dish that comes together in minutes in the Instant Pot.


Ingredients

  • 1 cup chicken broth
  • 1/2 cup diced onion
  • 1 large carrot, peeled and sliced
  • 2 oz sliced mushrooms
  • 4 oz orzo
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp poultry seasoning
  • 8 oz rotisserie chicken, chopped
  • 8 oz fresh broccoli florets
  • 1/4 cup heavy cream
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded parmesan cheese

Instructions

  1. Pour broth into Instant Pot. Add in the onion, carrots and mushrooms. Sprinkle the orzo on top. Sprinkle in the garlic powder, salt, pepper, poultry seasoning. Add chicken and broccoli on top. Don’t stir.
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 1 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
  3. Stir in the cream, cheddar and parmesan.
  4. Serve and enjoy!
