Instant Pot Protein Pancake Bites have only 3 ingredients! Whole wheat, healthy and tasty chocolate chip pancake bites made in your Instant Pot!

Instant Pot Protein Pancake Bites
One thing I always have in my pantry is Kodiak Cakes pancake mix. It is a just add water pancake mix that tastes great, is healthy and convenient. I usually buy it at Costco. If you like pancakes but want to make them a bit healthier (whole wheat + protein) then try Kodiak Cakes! I think you’ll really like them.
I decided to try making Kodiak Cake batter and cooking it in my silicone egg bites molds in the Instant Pot. I have made homemade pancake bites before and thought that it would work well with the mix. I was right. They were super fast and easy and I popped three of them into my mouth immediately (oops!).

How to make Instant Pot Protein Pancake Bites:
- In a bowl whisk together the pancake mix and the water until combined (do not overbeat).
- Spray a silicone egg bite mold* with non-stick cooking spray. Even though silicone is non-stick I like using the spray for easy release of the pancake bites.
- Spoon 2 Tbsp of batter into each mold. If you try to spoon more than this in the molds the chances are likely that they will come out undercooked.
- Sprinkle 5 chocolate chips into each mold. Use a toothpick to “stir” the chocolate chips in. Chocolate chips are an optional step but they are really tasty! Ideally I would have used mini chocolate chips for more even distribution but I didn’t have any on hand.
- Pour 1 ½ cups water into bottom of the Instant Pot. Place a paper towel on top of the egg bite mold. This will prevent some of the condensation from dripping down onto the pancake bites. Place the egg bite mold on a trivet/sling* and lower into the Instant Pot.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 12 minutes. When time is up let pot sit for 5 minutes. Release any remaining pressure by moving valve to venting. Remove the lid.
- Carefully remove the sling, mold and paper towel. Place a plate on top of the mold and invert the bites onto the plate.
- Serve immediately with syrup. The pancake bites taste best right away. If you want to save them for later you can pop them into the microwave for 20-30 seconds.
Some ideas to add extra nutrition to the pancake bites:
- Stir a scoop of vanilla protein powder into the batter.
- Use milk instead of water in the batter.
- Stir a beaten egg into the batter for even more nutrition.

- 3/4 cup water
- Chocolate chips

Notes
To add extra protein into your pancake bites, stir a scoop of vanilla protein powder into the batter. You can also use milk instead of water in the batter. Add an egg for even more nutrition.
I have not tried doubling the recipe and stacking 2 egg bite molds on top of each other. I imagine it would work. Cover the pan on the bottom with foil.

Mine came out super doughy. What could I have done wrong? I was super excited to make these for my grandchildren. Ugh
Turned out good. I used almond milk in place of water and used mini chocolate chips. It was good topped with syrup and served along side breakfast sausage.

I haven’t tried it with others. But I think if you just add 2 Tbsp mix it should be good. If you overfill they may not get done
