Instant Pot Hangover Soup
This soup was a very pleasant surprise! All of my family loved it so much. It doesn’t seem like anything fancy but it just tastes so good and satisfies. We served ours alongside toasted bread with a garlic butter spread on top. It was a great meal that didn’t require much time or effort at all. We have all been enjoying the leftovers. I think you’ll really love it!
The name hangover soup is random. I don’t actually know the real reason why it’s called that but according to the internet, “it’s called hangover soup because it is extremely satisfying and is like a warm hug in a bowl when you are not feeling that great at all. You will feel better after each spoon of broth and lick the dishes.” I don’t drink alcohol but I can see how this soup would make you feel better if you weren’t feeling at the top of your game!
Ingredients/Substitution Ideas
- Smoked sausage–I used Hillshire farm. Use whatever brand/type you like best.
- Dried minced onions–I get these in the big container from Costco and use them in all sorts of recipes.
- Carrots
- Cabbage
- Celery
- Canned diced tomatoes–or crushed or stewed tomatoes
- Tomato paste
- Onion soup mix–or you can make your own from scratch
- Worcestershire sauce
- Dried oregano
- Dried basil
- Sugar
- Beef broth–I like to use water and Better than Bouillon Beef Base
- Macaroni–or another type of noodle like orzo or ditalini
- Parmesan cheese–for topping. You can also use mozzarella.
Steps
- Add all ingredients except the macaroni and parmesan into the Instant Pot.
- Pressure cook: Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 5 minutes (if you don’t have the soup button try cook on low pressure for 5 minutes). When time is up let pot sit 5 minutes and then move valve to venting. Remove lid.
- Stir in the macaroni. Cover Instant Pot and secure lid. Make sure valve is set to sealing. Set the SOUP button to 1 minute. When time is up let pot sit 5-10 minutes then move valve to venting. Remove the lid.
- Stir and ladle into bowls and serve. Top each bowl with some parmesan cheese.
Notes/Tips
- To lower the sodium content in this recipe use low sodium/low salt versions of sausage, tomato, tomato paste, onion soup mix and broth.
- Serve with garlic bread, cornbread or make this easy and delicious french bread.
- I used my 6 quart Instant Pot*. You can also make this in the 3 or 8 quart pot with no changes.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months. The pasta will soak up a lot of the broth if you have leftovers so upon serving you may want to add more broth.
- This recipe can be gluten-free if you use Worcestershire sauce and a gluten free pasta. Please cook the gluten free pasta on the stove according to package directions instead of pressure cooking. Then add a little pasta into each bowl when you serve. This will prevent the pasta from getting super mushy.
