Description
Lots of veggies, smoked sausage, tomatoes and macaroni make an easy and delicious dump and go soup that you can make quickly in the Instant Pot or let it simmer all day in the slow cooker.
Ingredients

- 1 (12 oz) package smoked sausage, sliced or cut into cubes
- 1 Tbsp dried minced onions
- 2 medium carrots, peeled and sliced
- 2–3 cups chopped cabbage
- 2 ribs of celery, diced
- 1 (14.5 oz) can diced tomatoes
- 1 (6 oz) can tomato paste
- 1 (1 oz) packet onion soup mix
- 2 Tbsp Worcestershire sauce
- 1/2 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp white sugar
- 6 cups beef broth
- 1 cup (4 ounces) macaroni
- For topping: parmesan cheese
Instructions
Instant Pot Instructions:
- Add all ingredients except the macaroni and parmesan into the Instant Pot.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 5 minutes. When time is up let pot sit 5 minutes and then move valve to venting. Remove lid.
- Stir in the macaroni. Cover Instant Pot and secure lid. Make sure valve is set to sealing. Set the SOUP button to 1 minute. When time is up let pot sit 5-10 minutes then move valve to venting. Remove the lid.
- Stir and ladle into bowls and serve. Top each bowl with some parmesan cheese.
Slow Cooker Instructions:
- Add all ingredients except the macaroni and parmesan into the slow cooker.
- Cover and cook on low for 4-6 hours or on high for 2-3 hours.
- Stir in the macaroni. Cover and cook on high for 20-30 minutes, or until pasta is cooked.
- Stir and ladle into bowls and serve. Top each bowl with some parmesan cheese.
