Instant Pot Hairy Bikers Casserole
Hairy Bikers Casserole is a filling hearty meal perfect for the whole family. It is comfort food and is packed with flavor. Sausage and bacon are always welcome guests in my opinion and when you combine them with the acidity from the tomatoes and a sweetness from brown sugar you get a winning combination. Dried beans add protein and stretch the meal.
The name of the casserole might be puzzling to you. There is a television show on the BBC called The Hairy Bikers. “The Hairy Bikers are David Myers and Simon King, two northern blokes with a passion for cooking and food.” This recipe is a spin off of one of their recipes.
Although it’s different than what I’d normally cook I really enjoyed this meal. The flavor was super good. It stretches pretty far too when you serve it over rice. I cooked my rice in a separate Instant Pot*.
Ingredients/Substitution Ideas
- Pork sausages–you can use thin breakfast sausages or thick brat-like sausages. You can even use smoked sausages.
- Thick cut bacon–you’ll use the bacon grease to fry the onion in.
- Onion
- Garlic–jarred or freshly minced
- Chicken broth–or water and Better than Bouillon
- Dry navy beans–or butter/lima beans
- Bay leaf
- Salt
- Pepper
- Smoked paprika
- Diced–or crushed tomatoes
- Tomato paste
- Worcestershire sauce
- Brown sugar
- Italian seasoning
- Hot cooked rice
Steps
- Soak the beans: For best results soak the beans for about 8 hours in plenty of water. Rinse and drain.
- Brown sausages: Turn Instant Pot to sauté setting. Brown the sausages for about 5 minutes, turning half way through. They don’t have to be cooked all the way through. Move the sausage to a plate and set aside.
- Cook bacon until crispy: Cut the bacon into half inch pieces. Add the bacon into Instant Pot and cook until crispy. Use a slotted spoon to a plate lined with paper towels.
- Saute onion: Add the onion into the Instant Pot with the bacon grease. Saute until soft and translucent. Add in the garlic and saute for 30 seconds.
- Deglaze the pot: Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off saute setting.
- Add ingredients: Add in the soaked beans, bay leaf and salt.
- Pressure cook the beans: Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 20 minutes. When time is up let the pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
- Add in remaining ingredients and pressure cook: Add in the sausages, pepper, paprika, tomatoes, tomato paste, Worcestershire, brown sugar and Italian seasoning. Stir. Cover Instant Pot and pressure cook for 3 more minutes. Release pressure and remove lid.
- Serve: Stir and serve over rice and top with the crispy bacon.
Notes/Tips
- Can I used canned beans instead of dried beans? Yes you can. You can add all ingredients to the pot after browning the sausages and bacon. Then do only one pressure cooking time instead of two. I would use 1-2 cans of drained beans. I would also reduce the broth to 1 ½ cups instead of 3 cups.
- Why should I soak dried beans? Soaking your beans helps them cook faster and more evenly, and it can also make them easier to digest. If you add salt to the soaking water (in other words, make a brine), your beans will cook even faster; the salt helps break down their skins.
- Serve with hot cooked rice and steamed spinach or collard greens.
- I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
- This recipe can be gluten-free if you use Worcestershire sauce.

If you want it less like soup then only use 2 cups of chicken broth instead of 3 cups.

Really great recipe and very adaptable. I used tinned beans and threw in some mushrooms and broccoli too. I also left out the bacon and used veggie sausages. Only cooked for 20 minutes.
